Nice. Very nice. I have the salmon but no cedar planks. Some good ideas. I get back from my trip I'll give it a shot. Today it's Tom Horseman's Wisconsin beer brats on the new table top.

Your product is more like a smoke-baked salmon which is great and more like a meal entre. Being a Great Lakes fisherman, I have a lot of salmon and steelhead to smoke, and we eat it in recipes or as an appetizer in dips and crackers and prefer a firmer outcome. I brine mine overnight in a quart of water, a cup of brown sugar, a 1/3d cup of Kosher salt and 1/3d cup of maple syrup. Before smoking it, I season it with no binder and put it on a rack with a fan blowing on it. This binds the spice into a “pellicle” that is somewhat sticky after an hour and causes the smoke to really bind with it and also carmelizes for a nice color. It also prevents albumin from splitting and oozing out of the fish. Then I vacuum seal it in one use packages and freeze it so we have smoked salmon ready to go at and time for guests parties or recipes. Not much salmon fishing in your neck of the woods, so I thought I would pass on what we do up here.

So did you do 3/1 Cherry to Apple, or 3/1 Cherry and Charcoal blend? Cause I seen you put Charcoal in. I've never used the Charcoal blend yet, but wondering how it would taste on stuff.Thanks for the videos man.
