Isi Ewu is a spiced goat head recipe; it is an Igbo comfort food that is perfect for any day especially during the cold evening hours; the best way to serve isi ewu is to use a wooden mortar.
Ingredients:
1 Goat head, I used two heads
1 teaspoon of edible potash, (Akanwu/Kaun)
1 handful of Utaz leaves
6 pieces ehuru (calabash nutmeg), ground
1 table spoon goat meat mix spice
2 stock cubes
1 teaspoon onion powder
2 medium fresh onions
3 scotch bonnets
½ teaspoon cayenne pepper
1 cup palm oil
Salt to taste
