Hey GUYS! Welcome back to another UNCENSORED EATS episode. Today I decided to share my recipe for my Roaring Jerk Garlic Butter Sauce or Roaring Jerk. This is a multipurpose sauce that goes great with anything especially a slamming SEAFOOD BOIL.
RECIPE below:
INGREDIENTS:
3 lbs Unsalted Butter
2 sliced Scotch Bonnet Pepper
1 cup Chopped or Minced Garlic
2 torn Fresh Bay Leaves
1 tbsp Garlic Powder
1 tbsp Onion Powder
1 tsp Paprika
1/3 cup of Oregano
1 tsp Mustard Powder
1 tbsp Old Bay Seasoning
4 tsp Jamaican Jerk Seasoning or Homemade
1/4 cup Worcestershire sauce
2 tsp Lobster Base
1/4 cup Dark Brown Sugar
1/3 cup Distilled Vinegar
4 cups Sliced Onions, optional
1/2 Fresh Squeeze Lemon
DIRECTIONS:
1. In a saucepan over medium high heat melt 3 pounds of butter. Once the butter is all melted, add 1 cup of minced or chopped garlic.
2. Add scotch bonnet, oregano, paprika, onion powder, garlic powder, old bay season and bay leaves. Stir well to combine.
3. Add Jamaican jerk sauce or seasoning
4. Add Worcestershire sauce.
5. Add lobster base.
6. Add brown sugar.
7. Add distilled vinegar.
8. Cook sauce for 10 minutes over medium high heat, just until the color changes to a slight burgundy color.
9. Taste to make sure the sauce is good on salt and seasonings, adjust to you liking.
10. Add fresh squeeze lemon and stir.
11. Add this point you can add sliced onions. Cook until the onions are soft and translucent. Cook for another 15 minutes.
12. Remove from heat and serve hot with your SEAFOOD BOIL or dish of your liking.
