Great video. Always love your stuff and your Mashups with Chuds . As a Jamaican I have some versions of the rice 'n'peas and Home made Jerk Sauce you may want to try and compare. Ingredients (Serves 8): 1. 2 cups Rice - Regular long grained rice 2. 1 Can - Coconut Milk (Canned works just fine), NOT Coconut cream. 3. 1-1/2 cups red kidney Beans 4. 1 Habernero Pepper (Whole) 5. Optional - Small piece of Pigs Tail 6. 1+1 tsp salt 7. 1-1/2 oz unsalted butter Directions: 1. Soak Kidney Beans overnight (otherwise boil the heck out of it for about 1-1/2 hours prior, but that tends to break up the kidney beans which is ok) 2. Cover Kidney beans with water so water covers beans + about an inch above the beans, add 1 tsp salt. Put Kidney beans on for a medium boil, topping up water occasionally as water boils off till beans are soft but firm. 3. Retain water from beans after straining and set beans aside. 4. Combine water from Kidney beans, coconut milk and add water to make 4 cups of water in a large enough pot. 5. Add butter and salt to taste and bring liquid to a low boil. 6. Stir in rice 7. Add previously boiled kidney beans 8. Set heat to medium-low 9. Add whole Habanero (optionally also add pigs tail here, note reduce salt slightly since the pigs tail tends to be salted as well) 10. Cover pot and boil on medium low for approximately 15 to 20 minutes without removing the lid (glass lid makes this easier). 11. Watch pot closely here, because it's easy for the rice to burn. 12. Take Pot off heat, and after about 5 minutes, take out Habanero Pepper (Very carefully! - Don't want it to break in the rice :-), Mix contents around in pot, recover till ready to eat and Enjoy! Jerk Sauce (my personal riff on the original Boston Jerk sauce (home of jerk in Jamaica) Ingredients - 4 to 6 Scotch Bonnet Peppers (or Habernero peppers in the US/UK) - . I kick it up a notch by using 8 - 10 scotch bonnets - 2 tbspn ground Pimento (Allspice) - or about 20 whole dry berries - 3 sprigs fresh Thyme - 8 stalks scallion - 2 tbspn ground Nutmeg - 2 tbspn dark brown sugar - 2 tbspn Salt - 1 tbspn Black Pepper - 2 tbspn Oil - Vinegar - Blend all ingredients in a food processor. - Or if your food processor can't blend them, then pound them using a mortar and pestle until thoroughly mixed together. Only add enough Vinegar to make a paste that you can spread easily. Marinate overnight

Awesome video, great technique, and I'm seriously jealous. You got a free-range chicken at a mass retailer for about $10 US. If I could find a legit free-range chicken at Whole Foods, Sprouts, or similar stores, it would be at least $20.

Oof, looks amazing! From the colours on the can I think that was Blue Dragon coconut milk? These days, most brands don't separate into cream and water like that - definitely going to have to give that a try.

It was! However, this absolutely isn’t my preferred choice. If you can, go for either Aroy D or chaokoh. By far the best. I ordered some aroy d that didn’t arrive in time. Quick run to co-op was required!

Great video as always! But the notion of measuring protein and then salt in grams is several bridges too far for me. I've been a home cook for 50 years. Just liberally but not excessively salt the meat and leave the scale in the cabinet for baking.
