So in today video, I had fun catching up and cooking with my mum. Sorry, there is probably more chatting than actual cooking but it was a very impromptu video. We make one of our favourite dishes "Jollof rice", but we are showing you a different method which I hope you'll love too... Using a rice cooker. This is a super quick and easy method and tastes just as delicious!

RECIPE
INGREDIENTS:
- Rice 1kg (I used Easy Cook Long Grain Rice)
- Season mix: Salt, jumbo chicken stocks maggi cubes or/and knorr stock cubes, thyme & curry powder to taste
- Seasoning mix used here=
- 4 cubes of Maggie
- 1 tbsp jumbo stock used with no additional salt
- Thyme 1 tbsp
- Curry Powder tbsp
- 2 tins chopped tomato (400g tins)
- Coconut oil 1 tbsp
- 1 bell pepper
- 2 medium onions
- 1 scotch bonnets (adjust to spice preference)
- tomato puree 3 tbsp
- Vegetable oil 1/2 cup
METHOD
1) Wash rice, then add the following to the mix
2) Add seasoning mix and stir
3) Add chopped tomato and stir
4) Add coconut oil and stir
5) Blend pepper + onions + scotch bonnet + water and add to rice
6) Add tomato puree and stir
7) Add oil and stir
8) Check water level, I prefer sauce to be covering the rice by 1cm. You can add additional water while cooking later on. Avoid adding too much rice initially to avoid mushy jollof rice.
9) Switch on the rice cooker
10) After 10 minutes gentle stir the mix (add additional water or seasoning if needed) and then leave to cook for a further 15 minutes (depending on the type of rice cooker and type of rice this time may vary)
We used easy cook American long grain rice, if you use other rice like basmati rice you will need to reduce the cooking time as it does not take as long to cook.
