Nothing more delicious than a soft, juiced thru koesiester! I never drain mine! I lift it straight from the oil, let it drip for a second or 2, then into the sugar syrup, & boil it there for a minute or 2, then straight into the coconut, and they come out soft, juicy (soggy, as you call it), and drop dead delicious! Usually when I make them here in Europe for family and friends, the whole batch of around 60, is wolfed down immediately with everyone wanting more! Family of course already know koeksisters and so far no-one has complained of the soft, juicy consistency. In fact, they absolutely love it that way, and not dry on the inside. I will keep doing it this way. What I did learn new from this video, is that you make it completely flat before you put them in the oil! I always made them flattish, but not quite as flat as you do & I never could get the shape I was used to in CT. We too, had them every Sunday, but usually we bought our stash from a family friend, on the way home from church. She made them every Sunday and sold them to many in our neighborhoods who just could not do without their Sunday Koeksisters! Still warm! Yummmmmm!!

Its difficult to explain mixed spice. I don't use mixed spice. Its optional and so is the naartjie spice. Cardamom powder is lovely in the koesisters but is also very expensive in South Africa.
