I just came across your channel & am so inspired to make fatcarons !! Yours look amazing!! I had to save the video to watch it once I have my shells done. 😁 I am wondering if you could share what piping tip number you used for the filing that was at about 6:25 to 7 mins in the video ? ( with the little oreos & dipped in dark chocolate) I really love the look!

hey, for the sugar (the one that mixed with egg whites), can the dose be reduced or not? im afraid that itwould be too sweet.. thank you

Good question! Unfortunately, sugar cannot be reduced in macaron shells, because it would actually affect the structure of the cookie. One way to reduce sweetness is to pair up the shells with citrus fillings/curds.

Hi Kathleen, No, you don't really have to get them to room temperature for macarons. If you still do want to leave them out, 15 minutes is more than enough. Have fun baking 🤗

Wiggle Yum Thank you for your reply! You have the same oven as me so your recipe worked for me but my macaron tops started to crack after i did them again, any tips ?

Oh that's no fun when they crack :-( That could be due to few factors, but it mostly comes down to drying. If it's a humid day it might take longer to dry them than usual, since the humidity in the air keeps the eggwhites from drying out. It could also happen during the egg whites whipping stage. Sometimes, the egg whites don't dry out as much as they could during whipping. So, to be safe, make sure that the egg whites reach stiff peaks and dry them out longer than 30-45 minutes and this would help with cracking once they get in the oven. If it's raining I sometimes have to dry macarons up to 1 hour. I really hope this helps ❤

That's great 😁 This recipe makes about 46 individual cookies, so 23 when sandwiched. It will still depend on the piping and how large your macaron template is.
