Our lemon tree is now 3-4 years old and is producing a lot of lemons! The variety we decided to plant is called "New Zealand Lemonade" and in our opinion, it's less acidic than a regular lemon and definitely sweeter! Since we have so many lemons ripening this winter, we have to find creative ways to use them.
In this episode, Sally bakes a lemon olive oil cake! We found that this cake not only turned out quite well, but surprisingly highlights the lemon-y flavors quite well! A lemon olive oil cake pairs well with either coffee or tea, and is great as dessert or even a breakfast item.
As you will see, lemon olive oil cakes are quite easy to make so we recommend that you give this a try...preferably with homegrown lemons!
Recipe (for 9” cake pan):
2 cups all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1 1/2 cup granulated sugar + more to sprinkle on top (optional, but creates a delicious crunchy top)
zest from 3 lemons
2 Tbp fresh lemon juice
3 large eggs (at room temperature, really important!)
2 tsp vanilla extract
1 cup milk
1 cup extra virgin olive oil
