My first day on your channel. Married guy, age 70, and I do all the cooking at our home. Been trying to lose about 40 lbs to become a healthier weight. I’m working with a functional medicine physician for blood tests, etc. I believe I have metabolic syndrome plus I am hypothyroid. My body has been very resistant to weight loss despite much effort. Currently I track calories and nutrients using an iPhone app. Drink only filtered water and one cup of coffee in morning. Avoiding sugar, processed food, gluten, alcohol, and most carbs (no bread, pasta, rice, pastries, pies, muffins, etc). I’m excited about your channel because my biggest challenge has been to find good choices for foods and meals to prepare, now that I’m wanting to eat cleaner. Thanks for so openly sharing your inspiring story of regaining your health. I’m strongly encouraged.

Thank you Carmen! Glad you are working with someone who looks at everything instead of just treating symptoms. That's important. You'll be surprised how easy it is to come up with different food ideas once you get use to it. It really is forgotten knowledge thanks to all of the packaged (convenient) foods. You can do this. Just don't beat yourself up on bad days...and there will be those - we all have them. Like I said, you can do this.

Carmen, same here too. In fact, the lower I took the carbs, the more hypo I became per blood test but the weight loss occurred. My DO didn’t like the fact I’m not eating many vegetables (other than green leafy ones). So, it’s been a delicate balancing act for me. The weight started to return once I added more veggies to my diet. 😩 Good luck to you. Hope you’re seeing the results you need. I love Dot’s channel too!

Hi Dot...just made these for dinner tonight, in fact! Have you ever tried setting a cooling rack inside your baking pan to bake your fries? It keeps them suspended, so the air can freely circulate around each fry; making it crispier. Thanks for the cook off ; )

Have you tried Daikon radish? I make hash browns with those and they are delicious. Ooh it just occurred to me that I have to try making Daikon fries in the air fryer. And 1 cup of Daikon radish has 5 grams of carbs and 2 grams of fiber , leaving 3 net grams of carbs in a cup. They are also less watery than regular radishes, more like the root vegetables you used.

Alternatively don't peel any of the veg. I never peel any sweet potatoes especially for fries and then you up the fibre content of the veg and most of the vitamins are in the skin...

I’m new. We made rutabaga fries. Once in our air fryer also. Yummy. We don’t eat sweet potatoes. I’ve never heard of anyone calling them low carb before. They are very high carb on Carb manager

Parsnips are among the “goitrogens” group - a thyroid inhibitor; sweet potatoes are among the highest in potassium on earth, plus extra rich in fibre which is subtracted from total carbs, to find the net carbs in anything - a rare find!

I use celeriac for fries... Still think they are a bit too soggy. but I like the taste... but finding something that truly compared to potato in making fries... guess that wont ever happen. It is one of the few things I still miss from time to time

Cutting the ruhtaba it's easier to cut it in half prior to peeling them then cut slabs, unpeeled then peel. Where I live they are not waxed as they are an abundant crop. We call them turnips but I know that they are technically ruhtaba.

I am one of those people who don't use ketchup on fries. Can't tolerate the vinegar burn. So I've always ate French fries plain, lol. I've grown up knowing the unique "smell" associated with the rutabaga, it would always run me out of the kitchen when my mom cooked it for my dad. Did they have an odor when baked ? I think a regular turnip would be a good sub although I believe the zucchini fry has a more appealing taste. Love zucchini fires. This was a very interesting video, thank you so much for showcasing alternatives.

This is great. Thank you doing this experiment. What's funny is you called your parsnips a little burnt. Go checkout Chef John's (Food Wishes 3M+ subscribers) parsnip fries. He was going for that charred result and said they had a great off the grill flavor. I really enjoy parsnip mash, now I can't wait to try all 3 of these!

The easiest way to peel a swede is to cut it in 1/4 first so you can hold onto it. Also a knife is much easier than a peeler. Not sure why your swede's have wax on them!

I've had the spaghetti squash with marinara, (and I'm not usually a squash fan), but I could barely tell it wasn't pasta! It was very accommodating, and seemed closer to Angel hair in texture. Definitely a good tasting option. I'm actually planning to make it again soon. Also, based on using the spaghetti squash in another dish under the broiler, I noticed it browned nicely and that gave me the idea of making them into hash browns! First chance I get I'll be making some!

Well, couple of reasons. 1) I don't have a deep fryer, 2) I love them baked haha, 3) if I deep fried them, I'd want to use tallow, and that'd get a teensy bit expensive because I get my lard through Fat Works (great company). :)

Hi Dot. Upfront, I'm making a critical comment, which you may have heard already, but it could be helpful. First let me say I am thoroughly enjoying your cooking style. You're a cook. Lots of keto cooking I watch, they're not cooks. So I'm blessed to have found you. Oh and you have a great presence. I get stuck on repetitive phrases. Your use of, "I'm gonna" "go ahead and," in the video alone was either 15 or 23 in under 13 minutes. (I relistened, for this comment, and counted in 5s, but may have missed my total count.) My pastor used the same term. It was just something I had to overcome each week. I remember my aunt saying to me once, "If you use the words, 'really', one more time I'm gonna scream!" Of course I unwittingly responded with, 'really?'" Hahaa. But the effort to change it was worth it. Blessings

They're definitely related (rutabagas and turnips). A rutabaga is a cross between a turnip and a cabbage, and they put wax on them after harvesting to seal in the moisture. Turnips are usually smaller and have more brightly purple skin :) This one was definitely waxy and less intensely purple.

Well "low carb" can be anything from 100 carbs to under 20 carbs, depending on what you're going for. Keto, for example, is under 20. But a very heavy person simply dropping to around 50 carbs a day would do wonderfully -- initially. As they drop weight, they'll have to adjust their macros. I, for example, simply can't do a lot of carbs, which is why I'd only rarely eat root veggies, even low carb versions like rutabagas. Hope that helps :)

Actually a potato has 10-17g of net carbs (depending on size of the potato). Rutabaga is 6g of net carbs. Having said that, I'm not advocating rutabaga fries everyday. But it can fit into VLC (< 20g), moderate (25-50g) and liberal (50-75g) LC diets.

Actually a large russet potato is about 67g, large white potatoes about 30g and a large sweet potato is 26g of carbs. However, sweet potatoes are way more nutrient dense (Vitamin A, C, more fiber, etc.). Yes, 26g is a lot of carbs and if you are doing a ketogenic or very low carb diet (20g or less) you should avoid all potatoes. But those eating moderate (20-50g) or liberal carb (50-100g) can enjoy a sweet potato once in a while :)

If someone's purely keto, I totally agree. Better to spread veggie carbs throughout the day instead of so many at once if trying to stay under 20g. It really depends on where you are with your macros, and what your goals are. When I was 325, I could have eaten these every day (instead of the Cokes and fast food, with actual potatoes) and still lost a ton of weight.
