Can we just take a minute to admire the knife skills that are necessary to cut a piece of bread in half like that? Even toasted, I would probably ruin ten slices before I got one that was so perfect.

@@damienrowe381 Even if you, yourself, are capable of this, you'd have chops to know that it takes chops. Cutting thin and parallel, while keeping everything even, is a few grades higher than a brunoise. It's the scale of the project. It does help to work at the edge of the cutting board, so that the thickness of the knife handle and the knuckles doesn't complicate things, but this isn't something I've practiced, and I'm pretty sure I wouldn't nail it on the first try.

I honestly don't know what's so special about making a slice of toast and then cutting it in half. And this would be a specialty ? This is kind of typical of the French, a nothing thing they pass off as a “specialty”.
@thomasdecarlo8543

@@aris1956 It’s French ….. they have a special tool they invented called a duck press designed and used only to squeeze blood, juice and bone marrow out of a cooked duck carcass …. The French also the ones who invented gorge feeding ducks to fatten up liver for frogs gras …. what do you want …. their cooking is very specific …. I will never donor use Melba toast but in my case I am always amazed at how easy Pepin makes it look … you try doing it and let me know how it goes … enjoy …

when i was a chef after toasting the bread & cutting of the crusts & slicing though the middle we would cut each slice of toast into 2 triangles then put back triangles back under the grill to brown the white bread , it made the melba toast crispy & the toast would curl , we used the melba toast with our pâté
