3 c Milk 3 tsp Instant Active Dry Yeast 3 tsp Sugar 3 tsp Salt 4 oz Melted Butter 7 cups of unbleached white flour (more or less) Some oil Knead into a dough Let rise for an hour until doubled. Pinch the zwieback. Don't roll the balls. Let them rise again. Cover and let rise for another 45-60 minutes. Bake at 45-50 at 350F.

Hi Angela. Great tutorial. You have a nice way about you. I am also an Esau of Mennonite descent. Mother was a Hildebrandt. Grew up in Canada, now in the US. I loved these buns growing up. At 60 I’m learning to make some Mennonite food since my wife doesn’t have this background. I’m making farmer sausage and wareneke. The buns may be next.

I’m so glad you will try my recipe. I wish you great success. I have attempted vrenekas but I just don’t get them right. My mom used to make her own ricotta cheese, we called it gloms. There’s nothing like that cheese anywhere. I have tried with cottage cheese, store bought ricota cheese and it’s always a mess to keep the filling inside the though. So I go to our local spring MCC sale every year and there I get a nice plate of vrenekas with sausage 😆

Getting wareneke right is an art for sure. I have not been able to locate proper gloms but I found whole fat large curd cottage cheese strained with cheesecloth is a good substitute. Just make a sack out of 2 layers, put in a cup or so, hold it together at the top and twist. The cream is squeezed out and can be added to the schmountfat (spelling?) gravy made with sausage drippings and whipping cream and butter. So delicious! Of course drying the cottage cheese makes it less prone to leak out of the pockets. The other key is making the dough very thin. They just don’t taste right otherwise. I cheat using a pasta dough roller attachment on the kitchenaid mixer. Trying to recreate these things in a way that satisfies taste buds that never forget has given me a lot of respect for the skills of our ancestors. 😮😊

Greetings from another mennonite! My grandma has made this since she was young with her mother. I have had the privilege of enjoying it for 25 years now. My grandmother has grown old and no longer cooks it as of recently. I’m can get my hands on the recipe, but need to see the technique with the hands that She speaks about. Thanks for the video. I’ll be passing this tradition on for sure.

My mom makes these all the time and she also stuffs them with cooked ground beef and onion with salt and pepper and cubed cheese.

karafuto1776 Hallo, Ich glaube ich weiß was du meinst. In Brazilien sprechen die Mennoniten Hochdeutsch und Platdeutsch. In Hochdeutsch sagt man Zwieback und in Platdeutsch hört es sich wie Tweiback. Wenn die Brötchen frisch sind heißen die immer Zwieback. Wenn die Brötchen ein paar Tage alt sind, röstet man die und dann nennen wir die geröstete Zwieback. Wie schön das dieser Video dir gefallen hat!!

My last name is Esau as well... my grandma used to make these rolls and I have been meaning to make them myself from her recipe. Funny running into another Esau making zwiebacks from my KZitem search. Lol.

Stephen Esau that’s an interesting coincidence! Esau is my maiden name... my last name used to be Rempel. Making zwieback is not difficult, but don’t feel frustrated if the first try doesn’t turnout great. Baking bread of any sorts is always somewhat unpredictable. Practice makes perfect.
