I rinsed it in warm water but in this recipe, you might don't want to rinse it. You don't really have to. But if you don't like a little stickiness, you can. I rinse it in cold water when I make tsuke-men (diiping style noodle dish). Next video will be tsuke-men :)

It is a paste made from soy. They make different types of ramen here in the north of Japan, but miso is my favorite. I have had soy sauce ramen and butter ramen, but there is just something about the flavor that is so so good. Thanks for the video.

I'm not really sure what Sambal Oelek is but you can use any seasoning you like. You can put corn and butter for topping. It's also popular way in Japan.

I made this tonight but tripled the recipe and used low sodium miso paste. I didn't have the spicy sesame oil so I used normal sesame oil and put some seafood mushrooms green onions and chicken. It was delightful!

It just depends on how you slurp. It could be difficult for foreigners to tell whether Asian people slurp the noodles in normal or not. How I was slurping in this video is considered as totally normal way. I hope she'll get the different culture by watching this video :)

Another non-Japanese way to eat noodles is to wrap them around the fork. If you want the extra flavor that open mouth breathing while eating provides, you of course have to do that too. There are ways of doing it without showing the food, but it is tricky.

Actually, some people call them green onions, scallions, or spring onions. From what I can tell, in the U.S., they are often referred to as green onions or scallions.

Dashi actually means stock....he used chicken soup. Chicken dashi is enough for Ramen...Of course you can add fish or Konbu kelp but it's totally depend on the recipe. A lot of Ramen restaurants in Japan use only chicken bones and vegetable for their soup. You need fish or konbu dashi for miso soup though. This is a miso ramen. Different. I am a Japanese.
