I’m so glad you are posting more videos. Thank you! I especially love miso soup. And have been using a basic recipe and now sort of just “eyeball” it. I love it for the warm comfort, health benefits, and flavor. I’m trying this recipe tomorrow morning.

Fyi, I read somewhere that you turn off the heat before adding the miso since simmering or boiling kills off the miso probiotics.

A low simmer is fine at least to my knowledge but you definitely don't want to boil it, during or after you dissolve the miso. That's interesting about the probiotics though, thanks for sharing!

I add the miso last, not because I think I know better or anything like that. I eat miso to help with gut microbiome health. If you heat it too much it will kill all the good bacteria that makes it so healthy.

Yeah you don't want to boil the miso soup over high heat for that reason and it also alters the flavor. Thanks for sharing!
