Today we went to Jessop Farm to pick some fresh, sweet blueberries and then headed over to Harris Orchard (10 minutes away) to get some fresh cherries! Join us in trying to make mochi and traditional donuts while using the fruit to make glazes and cream filings!
Donut Recipe
4 cups bread flour, 1/3 cup sugar, 1 teaspoon salt, 1 package of active dry yeast, 1/4 cup softened unsalted butter, 2 eggs, 1 1/4 cups warmed milk, oil (to fry in)
1. Stir together yeast, sugar, and milk in a bowl
2. Add salt and eggs and beat until combined
3. Add half the flour and mix to combine
4. Add in butter and rest of flour and use hands to knead until shaggy dough forms
5. Pour dough out on a floured surface and continue to knead for about 10 minutes
6. Place dough in an oiled bowl, turn over a few times to ensure the dough is covered
7. Cover bowl with towel and let sit for 1 hour (or until doubled in size)
8. Punch down dough and turn over.
9. Cover bowl and let sit for another hour (or until doubled in size)
10. Pour dough onto floured surface and roll dough out to about 1/2 inch thick
11. Use round dough/cookie cutters to punch out dough
12. Optional: Use smaller round cutter to cut out the center to create classic donut shape
13. Set aside dough and let sit for 30 minutes covered
14. Heat oil to 350 degrees Fahrenheit
15. Place dough and cook for 1 minute
16. Flip donut and cook for another minute or until golden brown
17. Repeat steps 15 & 16 until all donuts are cooked
18. Decorate/fill donuts as desired and enjoy!
Mochi Donut
2 cups sweet rice flour, 5/8 cup milk, 3 tablespoons softened unsalted butter, 3 tablespoons sugar, 1 teaspoon baking powder, 1 egg, oil (to fry in)
1. Mix together 1/2 cup sweet rice flour, and 2 1/2 tablespoons of milk.
2. Heat in the microwave for 20 seconds on 80% strength. Set aside.
3. In a separate bowl, combine the rest of the sweet rice flour and milk, butter, sugar, baking powder and egg.
4. Add in the mixture placed in the microwave, and use hands to knead the mixture until dough forms
5. Roll dough into cylinders
6. Cut even pieces and turn into balls
7. Place balls in a circle (works best with 6 or 8) and seal together with water
8. Heat oil to 350 degrees Fahrenheit.
9. Fry one side of doughnut for 20 seconds
10. Flip over and let cook until floating and golden brown
11. Repeat steps 9 & 10 until all donuts are fried.
12. Decorate as desired and enjoy!
Blueberry/Cherry Glaze
3/4 cup of desired fruit, 2 tablespoons lemon juice, 1 tablespoon water, 1 1/2 cups powdered sugar
1. Place fruit, lemon juice and water over medium heat on stove
2. Stir continuously until fruit starts to release juices, then stir for another minutes and remove from stove
3. Blend mixture until smooth
4. Strain mixture into a bowl
5. Sift in half the amount of powdered sugar and whisk to combine
6. Sift in the rest of the powdered sugar and continue to whisk until fully combined
Blueberry/Cherry Mascarpone Whipped Cream
3/4 cup heavy whipping cream, 3/8 cup powdered sugar, 1/2 tsp vanilla extract, 4 oz mascarpone cheese, 1/2 cup of desired fruit, 1 tablespoon lemon juice, 1/2 tablespoon water
1. Pour heavy cream into a bowl, and sift in powdered sugar.
2. Add vanilla extract
3. Whisk until soft peaks
4. Add in mascarpone cheese and continue to whisk until desired thickness/consistency
5. Place fruit, water and lemon juice on the stove on medium heat
6. Strain fruit juice into the whipped cream and gently fold it in until combined
