This is a low-carb, low-glycemic load cookie recipe base and I will also give you a vegan option as well in case you want to modify it. These are healthy cookies for weight loss and lower-carb, low-sugar eating plans. Recipe -
Ingredients:
1 1/2 cups (210 g) all purpose gluten free flour
1 teaspoon baking soda
1 teaspoon kosher salt
2 teaspoons cinnamon
1 teaspoon Nutmeg
2 cups certified gluten free old fashioned rolled oats
1 cup Allulose sweetener
½ bag of Lily’s White Chocolate chips
1.5 sticks unsalted butter melted
1TBSP Milk of choice
1 egg at room temperature
1 tablespoon pure vanilla extract
Optional - add ⅔-1 cup of lightly chopped walnuts or pecans
Optional - replace chocolate chips with craisins, currants or raisins
Instructions:
Preheat Oven to 350 degrees.
Mix all dry ingredients. Set aside.
Melt butter in a glass measuring cup.
Add 1 TBS Milk.
Add Sugar and vanilla and mix well with a whisk.
Add egg and whisk again until well-blended and smooth.
Add to dry ingredients.
Add chips or fruit and nuts.
Let sit in the refrigerator for 15-30 mins to cool dough and make it easier to form.
Place on a baking sheet 1TBS for smaller cookies and 2TBSP for larger cookies.
Bake for 10-12mins for small cookies or 12-15mins for larger cookies.
Remove from the oven when browned and well-formed but not totally dry and firm in the middle.
Allow to cool on the cookie sheet before eating and storing. Store in the refrigerator for the longest shelf-life.
