I grew up eating nuoc cham but all the recipes I find are very sweet. The version I’m used to is very tart. Do you have a suggestion for that style? My dad is from Hue.

If I had to classify mine, it would be a southern Vietnamese variation - definitely a bit sweet. I would use this recipe as a base and adjust it to your taste. Likely adding a little less sugar and more lime juice to give you the taste you're looking for.
