Hi Chris. I really enjoyed watching your video. I never saw anybody preload ribs in apple cider vinegar and water. I'll try it. I struggled with that Silver skin membrane until I found a method that works for me. Take a regular knife and work it between the silver skin and the meat at the middle of the rack and work it back and forth side to side pushing it all the way through. Then pull up the knife on both sides and the whole skin will come off. No grabbing required.
