Pasta Alla Norcina
Ingredients:
Italian Sausage
Rigatoni Noodles
3 Cloves of Garlic
Shallot
Yellow Onion
Pecorino Romano Cheese
Heavy Whipping Cream
Dry White Wine
Olive Oil
Salt
Black Pepper
Italian Seasoning
Red Pepper Flakes
Garlic Powder
Onion Powder
Directions
1. Slice 3 cloves of garlic.
2. Dice 1 shallot.
3. Dice 1/2 of yellow onion.
4. Shred pecorino romano cheese.
5. Remove 3 italian sausages from casing and break apart.
6. Add about two tablespoons of olive oil to a skillet set to med-high.
7. Cook italian sausage for 6-7 minutes or until brown.
8. Add onions and shallots and cook for 2 minutes.
9. Add sliced garlic.
10. Deglaze the pan with 1/2 cup of dry white wine .
11. Reduce the wine till almost gone, then add in 1 1/2 cup of heavy whipping cream and reduce the heat to a gentle bubbling simmer.
12. Place your pasta into salted boiling water and cook until al dente.
13. Season sauce to taste with salt, black pepper, garlic powder, onion powder, italian seasoning and red pepper flakes.
14. Add in a ladle of pasta water.
15. Add pasta.
16. Lower the heat and sprinkle over some pecorino romano cheese. The sauce should be thick and creamy
17. Plate and top with pecorino romano cheese.
