1 qt. chicken broth
1 carrot, grated
1 zucchini, grated
finely shredded chicken
1 egg
chopped parsley
freshly grated Parmigiano cheese, optional
high quality extra virgin olive oil, optional
Bring chicken broth to simmer and add carrot, zucchini, and chicken. Let it cook together for about 8-10 minutes.
Beat egg and add a ladleful of hot broth, whisking vigorously, adding additional broth if needed. Then add egg mixture back into soup pot, mix well.
Lastly, add chopped parsley and stir. Serve in warm bowls and top with grated cheese and olive oil, if desired.
Serves 2-4.
