Hi Linda and thanks again for your comment. The best part about quinoa is that it can be the base of so many dishes. Just open the fridge and add with abandon. But, I will continue to offer more quinoa recipes because I like it so much myself too! Have a great weekend, Caroline

Best quinoa ever. It turned out nice and fluffy, 1 st time I truly enjoyed it. Parsley, mint, lemon juice, olive oil, salt and pepper for the win..

I'm not a super fan of quinoa but have used it as a "grain" with a meal that is lower in protein. BUT your method makes sense! Drying it is no doubt the key here. I really liked the idea of the apricot, pistachio, goat cheese salad. Sounds good on a hot night--we're getting temperature extremes in the Southwest US (100F/38C).. Funny when you mentioned apricot, I thought you were thinking dried. But that sounds good too--- a little pilaf-ish. Maybe you'd want another veggie or fruit in there though? The local tomatoes are looking good. I'm making this week.

Hi Caroline. For the pickled radish do you use the same process and ingredients as your pickled onions? And do the 3 varieties of quinoa cook at the same rate? Thanks!

Hi Janice - It’s quite a simple vinaigrette: DRESSING 1 lemon, juiced 2 ½ T extra virgin olive oil 1 T balsamic vinegar salt/pepper to taste If you are interested in any of the others, all the ingredients can be found in the description below the video. Hope you enjoy playing around with new salad ideas for quinoa. It’s a real go to for me, especially when I have some already prepped and in the freezer or fridge. Happy healthy new year! Do you use a natural release or an instant release after it has finished cooking?

Robin, what a great question and BIG oversight on my part so thanks very much for pointing it out. Let it go through a natural release but don’t keep it warm while it rests in the pot for another 30 minutes before you take it out. The rest time, both in the pot and out is important to let the quinoa finish absorbing the moisture but not get soggy. And don’t add the oil until it is completely cool. @@mediterraneanminutes you’re welcome and I did make it and it turned out perfect. I let it do a natural release and then cooled it in the pot with a paper towel and then on the cookie sheet. 😃❤️
