This is a super simple easy dessert that is suitable for all occasions. I have included details on how to make rice powder for the pirini in case it is not readily available at your home. Also included two methods to prepare rice powder for pirini; one which can be pre-preparded in large quantity and stored in jars untill needed. Second method which can be used when you are ready to make pirini and in case you don't have access to sunlight. Prepare rice powder whichever method you like and follow the recipe.

Ingredients for rice powder, method 1:
1 cup basmati rice
Direction for rice powder method 1:
wash rice thoroughly until water is clear, take it out to sieve and keep it for 5 mins to drain excess liquid.
Transfer to plate/tray. Spread evenly and put it in the sunlight for 2 hours or until dried completely.
Once dried, grind it to a coarse powder which is a bit rough to touch. It can be stored in a jar/airtight container in the refrigerator and used when needed. I sued 1/2 cup of the grinded rice powder in the recipe. Used the rest another day.

Ingredients for rice powder, method 2;
1/2 cup basmati rice
Directions for rice powder, method 2;
-Wash rice until water runs clear and soak it for 20-30 mins.
Drain excess water. Put soaked rice in a blender with 2 tbsp water and blend it for 3-5 seconds. Will blend really fast so be careful.
follow this step when you don't have time to dry the rice and prepare the dry powder and want to make it instantly.
Instead of dry rice powder add this and follow the recipe.

Ingredients for pirini:
1/2 cup coarse rice powder
4 cups water
4 pieces pandan leaves (3")
5 cardemon pods (top trimmed)
2 pieces cinnamon
2 tbsp sugar
1/2 can sweetened condensed milk
1 tbsp rose water
1 tbsp cardamom & cinnamon powder for dustings
Nuts of your choice at the top
Directions:
Add water, pandan leaves, cardemon pods, cinnamon sticks and sugar and bring it to a boil on medium heat.
Once water is heated, bring flame to low to medium and gradually add the grounded rice while stiring frequently. Let it cook for 12-15 mins or until rice is cooked.
Once rice is cooked, remove the pandan leaves, cardemon pods, and cinnamon sticks.
Gradually add the condensed milk stiring constantly and cook 3-5 mins. Add more condensed milk if it is not sweet enough for your liking.
Add rose water. Mix well and turn off the heat.
Remove the mixture to your serving tray and sprinkle cardamom and cinnamon powder. I added 1/2 tsp of each and mixed together and lightly dusted using a sieve.
And add nuts of your choice as toppings.
Serve hot or chilled. Put it in your refrigerator if you like your piriini cold. You can prepare this a day before and eat the next day.
