The pizzaria in the middle segment isn't named, but it's Juliana's in Brooklyn, located under the Brooklyn Bridge. Formerly known as Patsy's and later Grimaldi's, but the Grimaldi family operating it has been the same under each name change. My favorite pizzeria. Their pizza is sold by the pie, not by the slice. It's the old New York style, the first American pizza style, and so is similar to Italian pizza margherita. Yes, there is usually a wait at the door because they are deservedly popular!

Somebody commented down below "where's the cheese?". Well it's surely there since cheese was never actually part of the pizza at it's conception in history. true pizza is all about the sauce and the bread. both of whose flavour and favour have decreased in time due to merely commercialising it. Also a user named key has also provided another reason for it.

I can't make it good. Components like cheese or ham are already done and good, but dough is raw inside, and is all white, not even brown color. I tried to bake in the oven at 170 and 250 degrees. And its same result. Any advices what to do to have my dough good and done ?

Bake with only sauce for 7 mins, add toppings then bake for 5 mins. Set oven to 200C.

As much as I respect this job and this food, I must say 15years to become a "Pizzaiolo" is a bit of exaggerating. In 15 years people become engineers and so on.. I think two years of training and love for the job is more than enough to become pizzaiolo.

this guy is acting so arrogantly, "15 years at least to be a good pizzaiolo"... that's something which is terribly false, I love Neapolitan pizza and I am a pizza maker myself, Napoli isn't the only place you can have a Neapolitan pie, pizza is all over the world, in fact, Most pizzaiolos in Napoli are the ones being left behind currently, working by the traditions is nice and authentic, but sticking too much by rules made two thousand years ago or so... by people who had a very limited knowledge and resources! it just makes no sense. I like his passion and love for the product, but I can observe multiple flaws from the dough to the balance, and out of respect to the craftsmen i will not go further. Italians should respect us having interests in their culture and willing to dedicate the time and money to help spread it worldwide... if you are that old and experienced please start acting like it.

Amir Brahimi FOR EVERYONE: few Mozzarella!! Guys it was just "show" pizzas! Come on. Use your brains!! Mozzarella is expensive and they put very little just to show to cameras!! That pizza is cooked at perfection. The "cornicione" (crust) is bubbly, soft, the best you can get! Please. Amir I can understand your point. The thing is that to get that quality of pizza, you need to literally study and put 100% of effort. Anyone can do a dough. But not so many are able to produce a dough that is soft, light, easy to digest, tasty, natural, with very very little yeast. What you put on top is at discretion, but you should admit that americanized styles of pizza are horrible for us Italians :D 15 years maybe not. Maybe you don't need to have your parents to be pizza makers. One thing only: passion. Dedicate time to get to the right dough recipe. And you need to try 00s times. That's the reality Amir. If you want to learn the "how to" of Napoli style pizza. But if you just want to do pizza bases (say as Domino's, Pizza Hut, etc) then you don't need to be professional nor to put passion. And remember one thing, pizza shape is never perfect, the way you put mozzarella doesn't have to be mechanic (perfect). At all. It should be natural. :) and I am not a pizzaiola. Though I love pizza.

When Italians make this kind of pizza it is all marketing and puffery, like the “15 years” mastery comment. Pizza as we know it is an American product, and even though most of America only has awful Dominos and Pizza Hut and similar fare, the best pizza is in New York, where the modern version was invented by Italian immigrants looking to sell something to Americans that was cheap to make. Until Naples realized it could make money by copying the American version and claiming to have invented it, all Italy had were various forms of foccacia and bruschetta, which are both more expensive, in general, to prepare. All staples of Italian dining in the US cost about 25 cents to put together. Americans will not pay $30 for a plate of real pasta, much less a pizza, and “pizza” was invented for this reason.

SteamPunk Pizza was invented in Naples in 1889 to honour queen Margherita of Savoy. The margherita pizza was made to symbolize the italian flag with its colors. Pizza was brought to America, not the other way around. If you’ve never had authentic Neapolitan pizza IN Naples, your opinion is invalid.
