Pork Curry with Rai Saag is a Nepali style pork dish that combines tender pieces of pork with mustard greens (rai saag) and traditional Nepali spices. The mustard greens add a delightful hint of bitterness that perfectly complements the savoury pork.

Recipe
Ingredients:
100 ml Mustard Oil
15 gm Cumin Seeds
3 Bay Leaves
2 Cinnamon Sticks
3 Black Cardamom
5 gm Green Cardamom
10 gm Black White Pepper
200 gm Onion
600 gm Pork
20 gm Ginger Garlic
15 gm Turmeric Powder
10 gm Garam Masala
10 gm Timur Seeds
Water as required
Salt as per taste
200 gm Tomato
300 gm Rai Saag
Method:
1. In a deep pan, put oil, jeera, cinnamon stick, bayleaf, black cardamom, timur seeds, green cardamom, then add onion and fry.
2. Add pork and continue to roast , then add coriander powder, red chilli powder, ,garam masala, turmeric, and tomato and cook till done.
3. Finally add rai saag leaves and cook for 3-4 minutes.
4. Garnish with coriander sprigs and serve hot with steam rice or roti.
