I stocked up on potatoes, onions, rice, beans and canned goods, over 6 weeks ago! Long before our area went to our current shelter in-place/at home due to the current Coronavirus pandemic in US. We have been home sheltering, for well over ten days. Lol we live outside Chicago Il. My polish Grandma (Busia) made the best potato pancakes... I was so young when she passed, and am still trying to recreate her pancakes. Loved your video and all the instruction you provided. ❤️

Those potato pancakes does look great and I have to try making some at home. I have potatoes and need to begin cooking them up and that is a great way to do it. With everyone on lock down we have to live out of our pantry and refrigerator and that is one dish I can cook for breakfast, and as a snack as well.

In Ireland we made this only if there were potatoes left over , but didn't make a big fuss,we just mashed up the potatoes with a bit of flour,salt and pepper and fried it up and it looked like a pancake and perhaps serve it with fried eggs !!! 😊

I grew up with potato pancakes as our Saturday supper, never tasted them with onion until I was in my 40's. They are better without the onion. No need to dirty extra dishes for the eggs and flour, Mom cracked the eggs right into the potatoes and added just enough flour to hold it together and mix. Make lots to have some for breakfast the next day. Great with a fried egg for breakfast. To reheat just fry lightly in butter. Enjoyed hearing about his mashed potato version, we called those potato patties and made them with leftover mashed potatoes. Both versions are delicious!

I make my potato pancakes the same way ... the only thing I add to the mix on occasion are some pepper flakes and finely grated Parmesan cheese. I don't normally put any thing on top of them, but will try the sour cream, which I do put on baked potatoes. Thanks for the video .... very well done.

My mom use to make them & add some green onions & we would enjoy our breakfast for dinner. I especially enjoy for dinner I still do it like she did. Eggs & Bacon with the potatoes & biscutes & gravy. with Jelly & my favorite was berry with seeds. Thanks for the lesson

Strange maybe but we've always used leftover mashed potatoes,,add an egg or two, enough flour to make a stiff dough,,then drop by Tablespoonsful into hot skillet with frying fat or oil, and press down with the back of the tablespoon, oil the spoon from pan oil if it gets sticky. The. Kind made with raw potatoes ....we use only raw shredded potatoes,,salt, pepper and sometimes a little onion. From hubby's family recipe...think they just called them hash browns or German shredded potato cakes. My son brought back a recipe similar to this video from Germany when he worked there back in the 80's. it used half raw and half pre boiled potatoes with flour and eggs. So guess they can be made from all different kinds of recipes and they're still...so good.

.....agree with you this guy doesn't know how to cook.......watching him cooking the pan cakes.......just get a larger pan........simply grate the potatoes, add a little salt to draw the liquid, squeeze the potatoes, let the potato starch in the water settle, pour of the water carefully, add the settled starch to your potatoes, there is no need to add flour........

My mother made the German version for an occasional treat, you would hand grate the potatoes & onion, she would simply pour off excess liquid (not press out liquid) mix egg, flour, salt, pepper (less amount of flour). The batter will be looser like trad itional pancakes. When these were made, only applesauce or grape jelly was on the table. I was a one of 8 children, I had to have maple syrup, syrup came out for me, then one time we were out of syrup. I wasn’t going pass on this meal. So, I had one with grape jelly, loved it & the next one with apple sauce, loved it. Mom made this for dinner meal. Have tried this with the shredded version & never would finish or order it that way (fried hash browns). Master the grated version & you will pass a tradition down to ur children. Hide the syrup, put out grape jelly & applesauce & hoping chef will do a video on the grated version

Here you go 5 medium size potatos 1 small onion( about the size he used) 2 eggs 5 tlbs flour( full, heaping size) 1/2 tsp baking powder( this will make your pancake rise and be fuller in size while cooking. Then of course you add your salt and pepper. I have used any household cooking oil. Polish recipe, you hand grate the potato & onion on next to smallest grate size. It is called Polotzski Jewish recipe is called Lotka, and you hand grate potato & onion on the next size up on your 4 sided grater. This would be side of the grater used when making hash browns. Always best to drain away extra liquid after you grate your potatos I like to use a clean cotton dish towel, and give it a sqeeze to absorb water. The Polotzski recipe is more labour intensive using the smaller grate size; but they do cook faster. Everyone of my quest have gone bonkers over this delicious recipe ENJOY, this old world treat Recipe came from Europe and served often during depression

My German father also had us kids grate the potato and onion on an old fashioned box grater (ouch!) the batch would sometimes have turned purple by the time we were through grating enough for our family of 5. Mixed with egg and a little flour, fried in oil with a bit of butter and served with applesauce and sour cream...yum! Very different from my mother's mother (Grandma's) pancakes from the Hungarian side: I think she added baking powder because they had a more cake-y texture. Less onion. Served with a baked apple, cooked with brown sugar. Also, yummy - but totally different.

I don't like that pancake recipe but I subscribed to your channel because you are so considerate during instructions and I like the sound of your voice; it's kind and friendly1 Thanks for sharing. I wonder why so many chefs make the consistentcy like hash browns instead of pancake mix using the finer side of the grater? My potato pancakes come out like actual pancake texture not shredded.

The recipe is tweaked this way and that as per your taste and discretion , there is no wrong way . It's only a question of difference of taste . Respect my tastebuds . I make these all the time! My Grandma taught me. I use an electric frying pan and I "DEFINITELY" use alot more oil. They cook alot quicker and as long as you drain them on a paper towel they get fine. I make about 15 in 5 minutes!!😊

K Good: please do try to use less oil and cook them a wee bit slower - as he does here. His are perfect (and - his idea of making them ahead and rewarming in the oven is a great one: they really do taste just as delicious then). You're frying them with more oil and faster which means they will absorb more oil despite your draining them on the paper towels. The idea is to just get them golden brown while ensuring the insides are cooked thoroughly (remember there are eggs in there). The texture should be slightly crisp on the outside, cooked through but soft on the inside. There should really be just sufficient enough amounts of oil to brown, not fry (especially for heart health). A lot of the older passed-down recipes fried everything to a crisp! While so many of us grew up loving the taste, it wasn't good for us. For me, I love these with both sour cream AND apple sauce (but without the cinnamon).I make my own applesauce using the microwave...a mixture of several types of apples (always a couple of granny smiths, red and yellow delicious and gala apples) chunked, with not too much sugar, and cooking, stirring, cooking, stirring until it's just the right consistency. Better than anything store bought and utterly scrumptious. :)

boo boo I used to find it hard to cook for 1 until I met someone who cooked for herself very happily because she had a great system, which I had never heard of: one day a week she cooked all her starches and proteins for the week and cut up all her vegetables to be used that week either with the meal or in the salad. Then she stored everything in portions in either her fridge or freezer. When she got home from work all she had to do was warm up what she would eat for her protein and starch and vegetables, and make a salad. Whatever was in the freezer that she was going to use next day, she put into the fridge night before or in the morning so that it was thawed by the time she came home, and then she only have to lightly warm everything on the stove or in the microwave, depending on what it was or how she was feeling.

you really don't want to saute the onions beforehand. They'll be mushy, not crisp like the potatoes--which they should be to work in this recipe. You can use any kind of 'size' of potatoes, but this recipe is quite perfect. IF you want smaller diced potatoes, do the same with your onions and cook them all together, bound with the flour and egg mixture. Just don't use too much flour--I've had some really awful potato pancakes which tasted more like bread and of so little potato they were a major fail. His way keeps the potato deliciously browned yet soft inside. A huge win, for me - and I've been looking for just the right potato pancake recipe for years. :)

Nice video, thanks. By the way, Vitamin C is not Citric Acid. Ascorbic Acid is Vitamin C. Easy to confuse the two. Lemon or Lime juice will give you the highest amounts of citric acid if you don't have the powder. Vitamin C is also an antioxidant so either Citric Acid or Vitamin C will help prevent browning of the potatoes while they are sitting around after prep.

I agree. These potato are more like hash browns. My mother migrated from Czechoslovakia in the late 1920's. And what a cook she was. I remember the potato being grated pretty fine. And it was one of my favorite foods. She made a dill sauce to go with them, which I was not fond of. I just ate them plain. Or a little apple sauce.

These are boxty, or latkes. I tip the grated spuds into a teatowel and squeeze the bejesus out of them ... very gratified to see the late GREAT Julia Child did the same ... you have the teatowel to wash but much less fiddly :D Lovely grub!

My husband is deathly allergic to garlic. Do you know how hard it is to go out to dinner? Love to see a recipe without garlic. My grandmother from Hungary made them without garlic. Saved it for the vampires. Sometimes i grind up a little rosemary to add with the parsley. Delicious any time.

What you are making is a german potato pancake, more specifically known as kartofelpuffer. My mom used to make these once in a while when I was a kid. We just ate them with bacon/sausage on the side and topped with maple syrup like regular pancakes.

When my mother made Potato Pancakes they never put them in a food processor that the lazy way, the potatoes were grated by hand on on a fine grater along with the onions. Eating them after the food processor is like eating hash browns with your breakfast, no short cuts and after she fried them up in oil and they were crisp and we ate them with sour cream.

My Mother was German/jewish and made a dish she called Hungarian Goulash but it didn't have the same consistency as this ladys dish. It was much thicker. More like a stew. I recall she also put Apple in at the end of the cooking process. All I rember abt it was it had beef,potatoes, tomato , onion and paprika. I WOULD LOVE TO FIND THIS RECIPE. She is gone now but I would love to be able to hand this down to my daughter now.

I rarely drain, just bind with a bit of flour. Also, when I choose to drain, I use the liquid in corn, bacon, and potato chowder, or use it for a loaf of potato bread.

In the movie “All Quiet on Western Front” the German soldiers took a coffee can lid punched holes in it and scraped the potatoes down to a consistency they could use. Then I guess they added cream or eggs, I forgot. I used to eat the German ones by Knorr.

What kind of oil do you use ? In your pan, to fry, that’s the way we ate them at home as a child .........Great with sour cream, and applesauce.......Looks Great Chief......My background German, they eat with apples.....baked ......Too......Wow, looks so Good, your finished plate......

oils are not that healthy unless they are freshly squeezed and consumed right away because they go rancid otherwise - but the rancidity is invisible to our eye so we don't realize it. Coconut oil would be nice. But ghee would be great too. Ghee is EASY EASY EASY to make and withstands a higher frying temperature. U tube has vids on how to make ghee, I discovered only recently, and now I can't believe I lived as long as I have without knowing about ghee!!! Ghee would be good whether you wanted to make them with apple sauce or savory. Bacon fat or lard or tallow if you were going to make them savory. Probably other choices available as well, depending on where you live.

I TRYED POTOTOE PANCAKES AT A RESTAURANT IN FLORIDA CALLED PERKINS PANCAKE RESTAURANT, THEY WERE SOOOOOOOO GOOD , YOUR RECIPE LOOKS AND TASTE LIKE HASHBROWNS ,WAS NOT IMPRESSED.

That's weird that's the way I pill my potatoes but if you watch most chefs they pill towards them I watch a lot of these to learn but first time seeing peeled potatoes impressive love it looks wonderful I give a thumbs up
