On double broiler, cook 2 egg yolks and 1/3 cup granulated sugar

On high speed, whip 1 ½ cup 35% fresh cream
Keep whipping until the cream is thick and holds its shape
Pro tip: chill steel bowl and beaters in freezer for 1 hour before use
• Whisk the egg mixture into the whipped cream
• In 1 cup hot water, stir in 2 tbsp instant coffee
• Layering
Dip each lady finger into the coffee mixture
Line the full pan
Add a layer of the cream
Repeat with another layer of lady fingers and cream
Dust cocoa powder on the full cake
Cover with clear wrap
Refrigerate for 1 hour
