I always enjoy learning cooking chemistry on your videos. I did not know the lemon juice helped pectin set-up, I always assumed the lemon juice was added to highlight flavor. Thank you for sharing your knowledge.

My mother has got Quince in her garden but we have never bothered making anything with them to be honest. I might suggest she tries making this recipe though as it looks as if it could be a delightful thing to serve along with cheese as you said, or maybe just as a sweet treat.

We have a bumper crop of pears this year. Could they be used in a similar fashion to the quince? Less sugar? Good to see you again☺️

Defenetly Then it will be a fruit past But might need to had some pectine as it won’t be as rich as a quince or apple are . Also the flavour is stronger

I tried making this with apples not quinces but it was a little gloopy after 1 hour 10 minutes of cooking, not sure if that's too long, and wasn't as gelled as I would have hoped.

Doing it with apple would have need to had pectin as the fruit itself has not enough of it

I make quince cheese every year but I don’t remove the seeds cook everything and then pass it through a sieve Delicious with cheese in Mexico it is called Ate
