Thank you for sharing your recipe. My family came from the Las Cruces area but moved to California in mid-50’s. We were raised with NM chile as relatives coming to visit always brought a stash to the CA families. We never put flour in our red chile but my mother-in-law and her family were from the Roswell area and they used flour in their chile. I was fortunate enough to have a brother that made a few trips to Hatch and brought 14 sacks of medium hot to very hot red chile pods. My job was to clean them, cook, purée and then dehydrate for many ready to use packages.

@@marcyinspired1442 I actually saw your other video where you didn’t put flour in it, lol! My daughter adds flour to her chile but most of my siblings and I don’t. It’s all good and what one is accustomed to and since my mama didn’t use it then I don’t either.😊 Your videos are very well made too!

@@cocacolafiesta What's funny is I rarely make red chile from powder. Only when I'm in a pinch. So 99% of the time, I would never put flour in it. I always enjoy hearing how other people make theirs. I think we all copy our mamas because no one can ever match the way they cooked for us with so much love. Thanks for the sweet comment.

@@marcyinspired1442 I rarely make mine from powder either and mostly use pods but as began prepping in ‘05 when my sister asked "how much food do we have in case of an emergency?". Well, the truthful answer was about 3 weeks worth. Hence my quest to learn new skills to make sure my mexican pantry was well stocked. I have dried red chile pods, powder, canned green chile and dehydrated green chile and salsas. I have learned to nixtmalize corn to use for hominy, masa for tamales and tortillas. I also have the manual and electric mills to turn into flour. Well, you get the picture. I have plenty of home canned beef, pork and chicken to make my mexican meals. The saying is 3 is 2, 2 is 1 and 1 is none in having back ups but mine is 10 is 9, 9 is 8, etc..etc. My husband doesn’t get it though, lol!

I live in Taos and the vast majority of red is made with red chile powder - Chimayo Red btw - the variation is in their method, everyone there has their own way of making it and it's ALL AMAZING!!

Thank you, Marcy. Great recipe. When I don't have whole dried chiles I'll use powder. It does the trick. 🤠 The only thing I would add to your information concerns the oregano. I'm sure you know the difference but not every home cook knows that Mexican oregano (Lippia graveolens) is used in Mexican recipes rather than common oregano (Origanum vulgare). The difference in flavor is what makes Mexican food...well...Mexican.

Thanks for showing your method here. I actually forgot about the toasting the flour in a dry pan method. I usually make a roux with bacon fat but my grandparents made a thickener in your method here. Concerning chili, I may be wrong but I always thought my relatives made red chili sauce using Mira Sol but I remember grand dads version had some kick to it. Guajillo's, Mira Sol, is usually milder...I'm going to have to experiment here...I don't know my different chilis but can't tolerate too much heat...just an observation, thanks for tweaking my memory and curiosity.

My hubby loves huevos rancheros. I make a Chile Colorado sauce for his. The reason the chiles are better from Hatch NM is due to years of the rio grande flooding the land before it finally was dammed made the land rich from sediment. You cannot find those flavors anywhere else in the world. Everything grown there has it.

Funny. I have that same set of frying pans. I always use Bueno or Chimayo powder. I figure I might as well skip a step since I can get good powder here in New Mexico. I think chile grown anywhere up or down the Rio Grande valley is good stuff.

I've always made a rue with butter to make my red chile sauce. But I'm going to try your method of just toasting the flour only. If I don't need the butter, then I'm not going to use it.

I make a rue when I make this chile with meat. I fry the meat first, and use the fat from that mixed with the flour. But it definitely works without it. The butter probably adds more flavor. You'll have to let me know if you feel like it's missing when you make it this way.

If I make it with ground beef, I'll use a little oil to fry the meat first and then put in the flour and everything else. But, otherwise, I leave the oil out. Thanks for the comment.

You can use it for tamales, but I would recommend making it from chile pods instead. Tamales are so much work, so you want the best possible result. Here's a recipe I recently shared where I make red chile sauce from pods. You could try cornstarch. Just keep some water out, stir about 1/2 the amount of cornstarch to flour into the water and then into the remaining sauce in pan, and cook and stir until it comes to a boil. It will thicken quickly. Turn down the sauce to low just after it comes to a boil so the sauce doesn't break. Stir occasionally. You could also try fine mass harina instead of the flour. I've never done that but I frequently use cornstarch in place of the flour.

I'm not sure what you're making, but you can absolutely use any cheese you like. Mozzarella is a great melting cheese, while being mild in taste. I tend to use muenster a lot for the same reason.

The cumin comment I disagree with, a little bit is good, fresh garlic is always better than powder but just one to two cloves maximum. You have to trust the flavor of the chile, on that note I’m sorry but the chile ratio is way off. The color should be deep red or orange but not brown. An authentic Northern New Mexican recipe would have 1 cup of chile powder to 1 table spoon of flour and 1 to 2 tablespoons of vegetable oil or shortening of choice then adding 5 to 6 cups of water slowly while constantly stirring for 25 to 30 minutes.

I'm kicking myself for not addressing that in this video. I make it both with and without, depending on how I'm going to be using the sauce. Like, if I cook it with ground beef, I definitely fry the meat first in a little oil, then add in the chile powder and spices and cook them up that way. Or, if I'm going to be frying corn tortillas and dipping them in the sauce. I do it mostly to cut down on oil. But, it's definitely more traditional to toast all the spices in a little oil first.

Hola Marcy, I'm a new sub and have been studying your vids for inspiration. Although born in Roswell, NM, I grew up in Washington state. Back in the day ( 50's into the 60's), it was difficult to find ingredients for traditional Mexican food, my mom was a fantastic cook and she discovered chile powder and used it to make the sauces for enchiladas, menudo, chile Colorado, etc. I love to see how other people use similar old school ingredients. I'm going to try your method of making this sauce. My mom actually fried the flour and powder to make a rue. But some of her spices were about 3-4 whole cloves, which she removed once the sauce was ready, a splash of vinegar and salt of course, I don't think she used cumin, it might have been too much with the clove. I regret not paying more attention to the way she prepared her dishes because at the time I was adamant that I was never going to get married, therefore did not need to learn how to cook 🤣 Eventually New Mexico chile powder and other chile powders became available. My question to you is, did you use New Mexico chile powder? if not what powder did you use? In later years Gephardt Chile powder became a staple in mom's kitchen as well as other ladies in the area. I look forward to checking out all of your vids, thanks so much. Sorry for the novel 😅

Mole is a very complex sauce with so many layers of flavor, so there really isn't an easier way to make it than from a jar. The jar IS the less demanding way. Jeez, Walker. My friend, I don't believe Marcy intended to offend Northern New Mexico by suggesting that cumin and/or cilantro are included in all red chile sauces. She wasn't offering a region specific recipe. She was simply offering an alternative to using whole dried chiles in basic salsa de chile rojo. You can still make Northern New Mexico red chile sauce without cumin or cilantro while using a red chile powder of your choice.
