Key note people: restaurants use way more butter and animal fats cooking than you would think. Especially the nice sit down places. Where we would fry in regular oil, they may use beef tallow or chicken fat. Where we would use a tablespoon of butter, they use a half a stick or more. And for French food you double(at least 2x) the added fat of choice from the fancy restaurants😂

The past two restaurants I worked for (fine dining) use hella vegetable oil tho, and a lot of it too, not saying it isn’t the same as the amount of butter they use (which is a lot), but the point being is that I’d prefer these fine dining places to use butter and natural fats/stock solely over vegetable oil.

If you're referring to the study released recently highlighting that butter and saturated fats aren't as harmful as we once thought, that entire study was ONLY referring to butter in moderation. Recipes like this far exceed the amount of butter you should have daily, and absolutely will raise your cholesterol levels.

Same!! I was on the boat until he said over an hour to cook, then I had to jump off. Firstly, there's no way I'm using up that valuable time during the work week on potatoes. So that leaves a weekend. I just can't justify a 1 hour potato cook with 3 kids. That potato better taste like the messiah made it lol.

I worked 2 full-time jobs for 2 years, and before that one of them had about the same workload. Technically, 20 hours a week isn't exactly full-time, but I'm a teacher, so, factoring in homework checking, class prep, paperwork, 20 hours easily become 30-40. And I juggled 2 of those. Drained me of everything, including the energy and desire to cook. I wanted to eat healthily, but I couldn't even cook a basic thing. Girl dinner was my life. Quit one of those jobs, reduced the workload at the other one, moved back on with my family and now I cook as much as everyone, and actually have the motivation to cook

This is perfect example of why restaurant food is very unhealthy to eat regularly. I worked in restaurants for 8 yrs. I can attest to seeing the foods cooked were very unhealthy. Yes, a ton of butter tastes very good, but eat that and you can feel your heart attack coming sooner. Cook your own food at home and live a lot longer healthier life. ❤😂

I'm sure they taste delicious but classically fondant potatoes are first seared like you day. then add aromats, garlic, rosemary and thyme. add butter and homemade chicken stock and poach until the stock reduces and mixed with the butter to make the glaze for the fondant potato. they take about 20 minutes (30 minutes in total) so much faster than 1hr 15 minutes plus u get the flavour from the chicken stock

They take forever to cook specifically because they thick as hell. Others make the mistake of doing higher heat, less time, and it doesn't get fully cooked. Personally, I think I rather try this with thinner slices so you can season easier and have shorter cook time. Just would have to do more batches to cook it all.
