Since risotto is cooked with medium low heat, it's best when cooked with olive oil. Any butter you want to add should be added in the end. Wine: while it has a taste factor to it, it is primary used for de-glazing the pan after you cook like say mushrooms. Stock should be warm because if you keep adding cold/room temp stock, the pan and the rice cool down every time you add stock. When near consistent isn't maintained, any rice in general won't cook well. In this case that negatively effects in making the risotto creamy.

YUMM!!! Rice and cheese together! How could that combo go wrong?!??!! I love cooking with rice and adding it into recipes that don't even call for it. It's one of my favorite "extenders" that I'll add to things like a basic hamburger helper recipe that makes it stick to your ribs..lol Rice and macaroni are perfect for this. I'll be trying this one this weekend for sure.I really like how you keep adding the chicken stock to load up the rice.

+John Wayne umm.. maybe nasi tim is steam rice. Nasi = rice - Tim = steam (?) but Tim is little bit different with steam. I don't know hihi, but there is no white wine in Nasi Tim because it for kids and muslims.

It doesn't have the same starch content as risotto rice so it won't be as creamy. Can you get a short grain rice like sushi rice?

I have wanted to make risotto for a long time (Watching "Hells Kitchen" inspired the curiousity).However, I have such spotty luck with a recipe if I have never eaten it before, and I have never had risotto.I have a bag of arborio rice in my cupboard, and I think I may brave it after watching you, Hilah!

Add some Saffron to this and it makes it really elegant! When I do it, I add coloured bell peppers (red and green, mainly, to make it more Italian flag looking). And I also pre-cook chicken in the oven with olive oil and salt and pepper and then chop those bits up and add them at the end. Thanks for the tip on frying Risotto patties in butter... I'm gunna try that one.

Your method is identical to the way an Italian lady taught me years ago. Although the wooden spoon is traditional, my innovation is to use an inexpensive Silicon spatula. This is easier to clean and does not carry over flavors when used in other dishes.

Hi! I'm not a super super wine expert, either, but a dry white wine works best for most cooking. That includes chardonnay, pinot grigio and sauvignon blanc. I rarely pay more than $10 for a bottle of wine and find many wines in that price range work fine for cooking as well as drinking without breaking the bank.

Brown rice doesn't work well in risotto because the hull keeps the starch from fully releasing as it cooks. It wouldn't end up creamy like it's supposed to be. It would probably also take you over an hour of stirring if you were to try it. You can def add mushrooms though!

I like risotto a lot, but hate having to stand over the stove for 45 minutes stirring. Hence my usually getting it out in restaurants. xD And ahhh, it's another "traditional" recipe that everyone and their mom will feel the need to correct in the comments.

i've always slow cooked the rice and the broth together in 1 pot adding in an additional cup of broth accordingly. It sometimes came out like a sawdusty texture. I like to put jumbo shrimp and crushed red peppers in mine. Or chicken with the crushed red peppers

OH finally an american that makes the right risotto recipe!!! Just some suggestion: use the butter only at the end, and use just extra-vigin oliv olie (or just olive oil) to fry the onions and toast the rice; we usually don't use black pepper in the risotto (it doesn't matter how you pronunce it but if you want to know google translate pronunce it pretty well), I don't know why.... and finally we us to eat risotto with the fork :D ... thanks for this video! I love your channel!!!

Hilah I love making risottos. Especially pumpkin risottos and also seafood risotto is great too. Being if Italian background/Aussie my mum used to make this with leftovers she had in the fridge, and the possibilities are endless. Left over risotto and arancini (rice balls) with some ground mince inside and hard boiled egg is fantastic!

This is the side dish version of risotto. There are obviously countless variations and ingredients you can add here. A minor upgrade to this would be to add some finely chopped fresh dill, cayenne pepper and thinly sliced chicken breast. The wine is a great add in the beginning; not sure if broth would do the trick for the evangelicals and/or AA members among us. Maybe a small splash of white grape juice, or "Pure Vitis Chenin Blanc"? (that's what they call it at the Walmart....) ;)
