Ingredients:
10 cloves of garlic, chopped
2 tbsp salt
6 Chili peppers
4 Stalks lemon grass, small slices
10 shallots, small slices
20 Lime leaves, Thinly sliced
1 tbsp sugar
1/2 cup fish sauce
6 lbs ground pork (butt and large ground)
2 cups cooked sticky rice(rinse/strain)
6 stalks green onion, chopped
1 Cup Dill, chopped
4 meters sausage/hog casings , rinse with water
Directions:
Use mortar
Start with garlic salt and chilli peppers
Add lemon grass
Shallots
Lime Leaves
Sugar
Fish sauce
Mix everything together with pork
Cook some and Taste and adjust if desired
Add sticky rice, dill and green onion
Mix again
Use 2L bottle top or sausage stuffer (tie end of casing )
Stuff filling into casings
Bake to cook on 350.
** Serve with sticky rice, steamed rice and your favourite Jeow (spicy dipping sauce)
