Ingredients
● 1 ¾ cups of Chickpea flour
● 3 cups of water
● 1 teaspoon of sea salt or kosher salt
● ½ teaspoon black pepper
● ½ cup fine chopped fresh parsley
● Canola or vegetable oil for frying
● 1 lemon (can sub lemon juice from jar)
Preparation
1. First, pour 3 cups of water at room temperature into a medium size sauce bowl. Then, add the chickpeas flour, a little at a time, stirring until creamy, without lumps. Add salt and black pepper and stir. Then cook over medium heat until thick Stir frequently (8*10min). Mixture will begin to thicken. Remove from the heat, add fresh parsley minced and mix. Place back on med-low heat stirring well to remove remaining moisture.
2. Once the Panelle dough is ready, you want to spread it as soon as possible; otherwise, the mixture will be very difficult to shape. So, Pour the mixture into a pan, flatten until about ¼ inch thick.
3. Place the pan in the fridge to let the dough cool down at least 1-2 hours.
4. Once, cold and dense, reduce the dough into rectangular squares or whatever shape you like.
5. Heat oil to 350 degrees in a deep frying dish or cast iron pot. Place 3-4 pieces in and fry 3-4 minutes each side. Do not over crowd when frying to allow even cooking.
6. remove , salt & pepper to taste and add a dash of lemon juice.
Tips
You can add 2 cloves of minced garlic to mixture for added flavor
