I like this way more. In a pan in the oven, the bottom never browns up. Excellent work!

Nice I got two mini loads in the smoker right now I add pork chorizo to my ground beef add Ortega chilis chopped also chopped chipotle with the sauce I used cheddar grits for the binder now tge spice four jalapeños chopped , 4 habanero’s chopped season with meat church’s fijita rub going to glaze with whiskey bbq and black berry jam made into a sauce

Looks good Jess! I do Masa flour and drained Rotel in my meatloaf mix. Formed into fist sized mini-loaves and wrapped with homemade bacon (your recipe). Ketchup, brown sugar and Sambal for the glaze. Garnish with chives or scallions out of the garden, big hit with my family!

Shortening smoking time, I divided the meat into English cake molds, (the amount in the recipe is enough for a mold and a half). Cover the pan with cling film from the inside and then put the seasoned meat in order and cover/wrap, refrigerate for an hour until the ingredients are combined and then freeze for about half an hour to solidify. Season the meat in a pan from the top and then turn over on a wire rack (for smoking from all directions). Remove the pan and plastic wrap, season the rest of the meat and smoke. The meat is ready in two and a half hours.

I've never really understood meatloaf; have always understood it as some sort of a leftover concoction. Have actually never made nor had meatloaf. Just seems like a massive, smoked, glazed meatball... definitely going to try though.

I disagree with the premise that if you over kneed it you make the meatloaf tough. I’ve been making meatloaf for years I’d beat the shit out of it I squeeze the hell out of it and I’ve never had a tough meatloaf. My daughter is not a big meat eater she likes chicken she likes fish but she rarely eats beef but when I make my meatloaf she will stab somebody to get her some.
