New Orleans Native Charlie Andrews demonstrates how to make New Orleans Smothered Okra. Smothering is a cooking technique used by both Creole and Cajun Cuisines of Louisiana. It involves cooking Meat, Seafood or vegetables in a covered pot or pan with a small amount of liquid over a period of time. We take the Okra along with our Onions, Bell Pepper, Celery and Garlic which has been caramelized. We simmer that in a flavorful shrimp stock until it is cooked all the way down. Then we add our Shrimp and Smoked Sausage. Then we let it cook a bit more and that's it. Hope you'll give this New Orleans Classic a try!
