Ingredients:
3 cups all-purpose flour
3Tsp cup sugar (adjust to your sweetness preference)

1 tsb of yeast

1 cup of regular milk)
3 large eggs
2TSP of Margarine/butter
Oil for deep frying
Instructions:
Mix the Dry Ingredients:
In a mixing bowl, combine the flour, sugar, baking powder, salt, and margarine. Mix well to ensure even distribution of the dry ingredients.
Prepare the Wet Ingredients:
In a separate bowl, beat the eggs and then add milk. Mix until well combined.
Combine Wet and Dry Ingredients:
Slowly pour the wet ingredients into the dry ingredients while mixing continuously. Mix until you have a soft, slightly sticky dough. If the dough is too dry, you can add a little more milk.
Knead the Dough:
Turn the dough onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. You can add a little more flour if the dough is too sticky.
Rest the Dough:
Place the dough back in the mixing bowl, cover it with a damp cloth/polythene, and let it rest for about 30 minutes to allow it to rise a bit.
Heat the Oil:
While the dough is resting, heat the oil in a deep frying pan or pot. You want the oil to be hot but not smoking.
Shape and Fry the Mandazis:
Roll out the dough on a floured surface to about 1/2 inch (1.3 cm) thickness. You can use a rolling pin and cut out shapes using a round cutter or simply cut it into squares or triangles.
Carefully place the mandazi pieces into the hot oil, a few at a time, and fry them until they are golden brown on both sides, turning as needed. This should take about 2-3 minutes per side.
Drain and Dust:
Remove the fried mandazis from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.
If desired, dust the warm mandazis with powdered sugar or cinnamon sugar for extra flavor.
Serve Warm:
Soft mandazis are best enjoyed while they are still warm. Serve them with tea, coffee, or your favorite beverage.
