Recipe:
110g starter
370g water
100g unbleached all purpose flour
400g King Arthur bread flour
12g salt
Mix up with dough whisk into shaggy dough
Rest 1 hour
Wet hands before completing 4 stretch and folds, each 1 hour apart
Counter bulk ferment for another 1-2 hours or so depending on temp of house.
Press dough with wet finger if it fills back in immediately it's not ready. If it stays indented time for shaping, rice flour and proofing basket.
Tuen out onto counter with rice flour. Shape into boule. Then into basket with tea towel. Place in Walmart bag overnight in fridge.
Next day. Place dutch oven into oven and Preheat for 1 hour at 550 degrees.
After 1 hour, carefully remove dutch oven and put dough onto parchment or slip mat. Dust with rice flour. Score with bread lame. I use a layer of foil on the bottom of pan to prevent burning. (I also keep an extra pan in oven to distribute heat.) Throw some ice chunks in dutch oven for steam. Carefully Place dough into dutch oven. Cover and put in oven. Reduce heat to 450 and bake 30 minutes. Uncover. Lower heat to 400 and bake additional 5-10 minutes til it's as brown as you prefer.
Slice the next day or when completely cool. Do not slice warm bread.
Starter is fed nightly after being scraped to almost empty with: 150g unbleached all purpose flour, 150g drinking water out of a jug. Can also do less..m just make sure it is equal parts. If not feeding store in fridge. Always feed night before making dough.
Will also need: food scale, mixing bowl, dough whisk, bench scraper, shower caps to cover, tea towels, proofing basket, walmart bag, Dutch oven with lid, bread lame and rice flour.
1 hour total of work time. 3 days til bread is ready to enjoy.
