Spanish Saffron Shrimp Rice
Ingredients
Rice - 1.5 cups
Vegetable broth- 4 cups
Jumbo prawns - 500 g
Onion- 1 (finely chopped)
Garlic cloves - 6 (finely chopped)
Frozen peas/ freshly peeled peas- 1/2 cup
Salt - 2 tsp
Black pepper powder - 1 tsp
Spanish smoked paprika/ red chilli powder - 2tsp
Saffron - 1 tsp
Oil - 5 tbsp
A handful of finely chopped coriander or parsley for garnishing.
Method
• Wash and devein the prawns and pat them dry.
• Heat oil in a pan , add some garlic and saute until lightly browned
• Add the prawns,salt and black pepper powder.
• Sear for 1 to 2 minutes on medium high heat and switch off the flame.
• Heat oil in another pan and add the onions.
• When the onions turn golden brown add frozen peas, paprika, saffron,salt and the remaining garlic.
• Mix the spices well.
• Now add washed and drained rice .
• Saute the rice very gently.
• Add vegetable broth , mix all the ingredients and let it cook on low flame.
• Add the prawns when the rice is almost cooked.
• Cover and cook further until the rice is completely done.
• Garnish with chopped coriander or parsley and serve.
