Zelf maak ik al jaren spekkoek, maar dan volgens een ander recept. Ik gebruik er ook pandan bij, wat een mooi kleurrijk geheel geeft. Dit recept ga ik zeker eens proberen, al is het maar om het verschil te proeven met mijn eigen recept!

Here in Indonesia we use the yolks only. A square pan can contain up to 30 egg yolks. Yikes! Also, we prepare the batter in an entirely different way. First we cream the butter with some condensed milk until fluffy. Then, we beat the eggs and sugar till ribbon stage. Then we fold the butter into the egg mixture and then mix in the flour and spices (we don't use nearly as much as the dutch recipes). Indonesians seem to prefer this method

Luc Van kasteel We use more egg yolks than 30 in Indonesia. 1 yolk to 10 grams of butter, so we use 50 yolks to 500 grams. The egg yolks are the element that gives this cake structure and moisture. And yes: we use condensed milk (susu kental manis) in the spekkoek (or lapis legit as we call in Indonesia). Also, we add powdered milk (susu bubuk) and emulsifer to make the cake really creamy and soft. But spekkoek should be made with 10-15 eggs, and kue lapis legit is made with a lot of yolks and only the yolks :-) also, lapis legit is made with just one single batter, so the batter isn't seperated. The Image thumbnail is lapis legit, Brenda, not spekkoek :-) Oh, and when are you making gado-gado? I always have problems with the tofu or tempeh. I really like your video's! Luc, I really appreciate your educating me on the differences between lapis legit and spekkoek. The term "lapis legit" was completely foreign to me until a few years. ago....all my life I had heard only "spekkoek". A video on gado-gado is definitely in my future...I just don't know when. I read the history of Indonesia ages ago that it was under the Dutch for many years, so this cake, was brought to Indonesia and they are making it their way after many years later. More egg yolks and less egg white. They didn't use butter but margarine only. Some added very heavily on the spices that makes the Lapis Legit not nice.

5:16 Seperate the eggs in a seperate small bowl. When you mess up, you can set that bowl aside, get a new one and go on with the next egg to save time.

i have to say this your pronunciation of the dutch word spekkoek is perfect now i am going to watch your cooking vlog Question 1 Why should the egg yolks go one by one with the butter-sugar mixture? question 2 Do you only use the upper boiler or the lower boiler, our oven has top and bottom boilers and can be used seperadly or the top and bottom at the same time

Hi Anton, can I answer your questions? 1. It's so that the batter will mix properly, it will rise beautifully and the taste won't be dense. 2. Layer cakes are best made with this kind of oven. First layer top and bottom boiler. For each layer after that, use only the top boiler. You have to know your own oven, sometimes it takes less/more minutes for each layer. Always take the minutes as a guide only. Take it out when the top is brown, you don't have to wait for the oven to ding. Hope that helps! I hope you understand me, English is not my first language 😅

I love baking layer cakes too, but I mostly make Sarawak layer cakes. Those crazy sweet and colorful ones. I had to tone down the sweetness when making one from my mom's recipes. This is a great video!

@@ezliiva6537 Since I left Indonesia when I was 6, I don't remember all of the sweets. Spekkoek is the only cake my mom used to bake--I'm not familiar with Sarawak layer cakes. Hi Brenda, this looks easy but just time consuming! Are you never prikking the cake to see if it's done? You're just following the look of the top layer? My mom has made a couple and I used to live in the Netherlands so purchased some at the Tako stores there... I'm going to try it out!

Hoi Brenda. Ik wil eerst even zeggen dat u een prachtige spekkoek gebakken hebt. Ik bak soms ook 4 spekkoeken (bijv. Normaal, pandan, met pruimen, chocola, etc.) tegelijk en doe dit bijna wekelijks. Hier heb ik een paar tips:Voor de échte indonesische spekkoek gebruik je alleen eigeel. Dat zijn er een stuk of 30. In indonesië wordt ook gecondenseerde melk gebruikt. Dat moet er echt wel in zitten. Als je perfecte en gelijke laagjes wil hebben moet je het beslag afwegen (ik doe 120 gram per laag). Zo krijg je mooiere laagjes. Ik gebruik de specerijen: kaneel, nootmuskaat, kardemom, kruidnagel, anijs, ketumbar, foelie en wat gember. wat je beter kan doen is eerst de eigelen wit (15 min) kloppen met de suiker en dat mengsel bij de boter doen. En dan mixen. Ik zeg dit omdat ik al sinds mijn 12e jaar spekkoeken bak. Ik hoop dat u hier iets aan gehad hebt. Succes!

I assume your mother didn't have a fancy machine like that (like me) so how would she cream the butter/eggs/sugar and how would she mix the batter? Also, howmany grams is in that stick of butter? thanks!

Hi Arvid....but my mother did have a fancy machine....in fact, she had two of them to do her creaming and mixing in. They were both the earlier models of KitchenAid. There are 113 grams in each stick of butter. Thank you for your questions. If I can help with anything else, please let me know.

Hoi Mies....11 egg yolks are mixed in one at a time with the sugar and butter. The 11 egg whites are beaten till they form stiff peaks and added to the other mixture at the finish.

Graag gedaan mijn achternaam is Mensingh en heb in Amerika ook familie namelijk in New Orleans, California en North Carolina. En onze familie komt uit Java en van oorsprong België. In de jaren 60 was onze familie met de "Van Oldenbarneveld" schip in Nederland gekomen en in de pension van Leersum verbleven. Ik had geprobeerd spekkoek te maken alleen de eiwit was niet helemaal stijf en mn makan was mislukt. Ik binnenkort weer maken

Mijn ouders, zus, broer en ikzelf waren allemaal op Java geboren...gingen naar Nederland in 1951 met de Zuiderkruis, en naar Amerika in 1960 met de United States. Een Oom en Tante van mij wonen momenteel in Leersum, en ik ben daar eens geweest. Ik hoop dat je weer gaat proberen spekkoek te maken. Laat me weten of het dan wel lukt. Het is een echt heerlijk recept....mijn moeder kon heel goed koken, en dit recept is van haar. Het beste.

I made the cake today,the bottom line and the side was burn but I used the nonstick baking dish, do you think that’s way it burn?

The cake needs to be able to stick to the sides, so that it does not get a chance to burn. Thank you for watching my video.

Ik bedoel het niet kwaad hoor maar uw retoriek klopt niet Ik woon in Thailand en bak ook elke dag spekkoek ik heb een bakkerij namelijk Het bakken van brood en cake gaat hier uit de kunst want de temperatuur is perfect ik heb bv geen rijskast nodig Nat-gebak en koekjes gaat moeilijker Ik maak alles zelf van spijs tot abrikozenmoes

its not dutch indonesian, it originated from indonesia, and then surinam, but only because of the dutch stealing and kolonizing land in indonesia and surinam, thats why they think they own it.

spekkoek, or spekuk in Indonesian, was developed in the Dutch East Indies (comprising most of modern day Indonesia). In those times spices commanded high prices (unlike the commodity they are today). Spices were incorporated liberally in a traditional layer cake design, similar to for example baumstriezel in Germany and Dobos torte in Hungary as a display of wealth and power. You are technically correct in your suggestion that spekkoek is not Dutch Indonesian as when it was developed the idea of Indonesia as a nation state did not even exist. It would be more technically correct to call it Dutch-indian, directly referring back to its origin in the Dutch East Indies.

Wouter Masselink Wow thanks for the history behind it. I had this kueh lapis in Singapore and Malaysia since young and i thought was origin from indonesia. It is interesting to know that it has something to do with Dutch, really. The world is round.🌎😉
