INGREDIENTS:
To Make Mutton Curry:
- Mutton Chops - 2 kg
- Ghee - 2 tbsp
- Oil - 4 tbsp
- Cinnamon - 3 sticks
- Cardamom - 7
- Cloves - 8
- Cumin Seeds - 1 tsp
- Fenugreek Seeds - ½ tsp
- Curry leaves
- Medium Onions - 4 (Sliced)
- Salt to Taste
- Tamarind - 75g
- Hot Water - 100ml
- Ginger + Garlic Paste - 2 ½ tsp
- Turmeric Powder - ½ tsp
- Kashmiri Chilli Powder - 1 tsp
- Red Chilli Powder - 2 tsp
- Large Tomatoes - 2 (Sliced)
- Coriander Powder - 2 tsp
- Cumin Powder - 1 tsp
- Curry Powder - 4 tsp
- Hot Water - 3.5 Litres
- Pepper Powder - 1 tsp
- Green Chillies - 5
For Flour Paste:
- Flour mix - 2 tbsp
- Cold Water - 50ml
To make Thakkadi Mix:
- Roasted Plain Flour - 1.5kg
- Freshly Grated Coconut - 350g
- Medium Red Onion - (Finely chopped)
- Green Chillies - 4 (Finely chopped)
- Cumin Seeds - 1 tsp
- Garlic Powder - 1 tsp
- Pepper Powder - 1 tsp
- Turmeric Powder - ½ tsp
- Crushed Chilli - 1 tsp
- Salt - 1 ½ tsp
- Curry Leaves (Crushed)
- Maldives Fish (Maasi) - 3 tbsp
- Leeks - 50g (Chopped)
- Mutton Gravy - (warm)
