Quick and easy recipe for vanilla / chocolate (cocoa) cream, with milk and flour. It can be used for cake, éclair, as a pudding or dessert in a glass / pot as I did. It's cheap, quick and easy to make.
Ingredients (6-7 servings):
• 1 liter of milk 3.5%
• 100 g of white flour
• 180 g sugar
• 5 yolks
• Flavors according to preference
• Optionally 100 g of 45% cocoa chocolate or a tablespoon of cocoa
We prepare a vessel with a volume of 1.5-2 liters in which we will boil the cream. A pot with a non-stick coating is helpful if you have, possibly with thicker walls. Even the enameled cast iron is good. However, I would recommend that you avoid stainless steel. In this type of dish I noticed that the creams burn and stick the worst.
We put white flour in the bowl. I recommend using the cheapest 000 or 480 flour you can find for the cream. Very cheap flours have little gluten or low gluten, and are richer in starch, which is perfect for creams.
Add the granulated sugar over the flour. The bigger the sugar granules, the better. By mixing the flour with the granulated sugar, we will prevent it from forming lumps. So we mix these two ingredients very well.
Then add the yolks and 2-3 tablespoons of milk. Mix to obtain a thick and homogeneous dough. Gradually dilute with milk, stirring constantly to obtain a perfectly homogeneous mixture.
Now put the pot on low to medium heat. We sit next to it and mix frequently, otherwise the flour is left at the bottom and burns.
When the mixture boils, it thickens. After thickening, however, it must be boiled for about 6 minutes, stirring constantly. As you know, the starch cream boils for only 2-3 minutes, but the flour cream needs a little more time. However, you will know when it is cooked enough, because you will no longer feel the specific taste of flour.
All the cooking of the cream from start to finish took 15 minutes and it turned out perfectly homogeneous and fine.
At the end you can add flavors as you like. I used orange and vanilla flavors. If you like sweeter creams, you can add more sugar right now.
If you want you can put in the composition 100 g of chocolate with 45% cocoa, if you have of course, or a spoonful of cocoa.
You can make layers of colored cream in a larger glass bowl or individually in glasses if you have guests. You can decorate simply and elegantly with a mint or basil leaf and any red fruit.
You will be amazed with such a simple dessert, made from milk and a few eggs, it can be so creamy and delicious! It is a basic recipe that every housewife should have in her recipe book!
