Tip: if you can't find cake flour or tempura batter mix, you can do this: mix cornstarch and 2 tablespoons of all purpouse flour

I think it's the other way around. To get 1 cup of cake flour, you need 1 cup of all purpose flour then remove 2 tablespoons, and replace it with 2 tablespoons of cornstarch. Just searched for a substitute as well. Haha

Cake flour substitite: For every 1 cup AP flour, take out 2 tbsp of AP flour, add 2 tbsp of cornstarch.

my favorite tempura is maitake 舞茸 😋yumyum.dipped in warm mentuyu,grated radish and ginger mix.fresh maitake straight from the northern mountains is now very,very rare it's very expensive but it's worth it.so when the chef got some,he calls my parents first

That's actually pretty common. The slight acidity also helps keep gluten from forming as much.

This was excellent! It came out perfectly. We made a bunch of different vegetables, shrimp, and even lobster. I had Hapa Hawaiian salts and used those for dipping as well as making several delicious dipping sauces. One used smoked Shoyu, cream sherry, and a little water--excellent with the shrimp and veggies. For the lobster I just used a tiny bit of the Hawaiian salt. So good! Oishi!

I used to live in Japan. There was a tiny tempura shop that only seated 10 people at a counter (no tables). It was the only place where I've seen egg-yolk tempura. He would cradle the yolk in his fingers, dip the yolk and fingers into the batter and, yes, stick his fingers into the oil. I suppose if it was not done this way, the yolk would separate. I was told by an older Japanese person that this was the authentic old way of cooking tempura. I asked the cook if anyone can do that and he said no, he was trained for the heat tolerance from childhood. Not only did this shop have this fascinating rarity, it was far and away the best tempura I've ever had.

Italian fried zucchini is made with placing the zucchini in flour and egg wash. Tempura is placing the egg plant n flour and egg wash. Tempura seems to be a fancy word for fried vegetables.
