How to make the best focaccia with big bubbles?
Focaccia is the Italian cousin of fougasse, it is also called in certain dialects fogazza and fügassa. A great classic of Italian cuisine, there are as many versions as there are provinces. Flour, water, yeast and salt, 1 night of rest to get big bubbles, are the starting point for making this flatbread yourself, crispy on the surface and soft on the inside.

🔴Recipe:
2.5 glasses of flour water (250gr)
1 glass + 4 tablespoons of water (200 ml)
2.5 tablespoons olive oil (15 gr)
1 teaspoon of salt (4 gr)
1 teaspoon of dry yeast (2 gr)
for garnish:
10 cloves of garlic
1 tablespoon of butter
a few cherry tomatoes
cooking focaccia:
in the oven at 230°C for 25/30 minutes
