Menemen - Turkish Eggs
Ingredients:
Butter - 1.5 tbsp
Oil - 1.5 tbsp
Capsicum - 1 big sized, chopped
Tomatoes - 3 large ,grated or finely chopped
Garlic - 2 cloves , finely chopped
Red chilli powder - 1 tsp
Black pepper powder - 1 tsp
Chilli flakes - 1 tsp
Salt - 1.5 tsp or as per taste
Cheese ( of your choice) - 1/2 cup
Eggs - 3
Parsley/coriander finely chopped- for garnishing
Method:
• Heat butter and oil in a pan.
• Add capsicum and cook for 3 to 4 minutes.
• Add the tomatoes , cover and cook on medium low heat for 2- 3 minutes or until done.
• Add garlic and saute .
• Now add chilli powder, black pepper powder, chilli flakes and salt.
• Add cheese and mix well.
• Break in the eggs and stir them very gently.
• Cook the eggs for a minute and switch off the flame.
• Garnish it with finely chopped coriander or parsley.
• Enjoy your Menemen.
