Will it be sour because of the lemon? Also can I know how much water you added to blend the tofu?

No, the amount of lemon you use should be just enough to make the soymilk curdle. Of course too much will make the tofu sour at the end. So it's best to add them in batches so you don't add too much. For the water, it'll totally depend on how thick or light you expect the resultant milk to be. In this video I added about 3 litres of water so there was more whey at the end.

Yes you can! Fresh tofu can last about 2-3 days in the refrigerator while cooked tofu can last around the same time. However, it is advisable to sell them fresh since keeping it for a while can affect the taste.
