I just cooked Tom Saap last week,I gave some to my friend and she and her family like it.This week I will cook Kaeng Liang I already bought the ingredients except the ivy gourd leaves ,they don"t have here in Maryland.

Hi Gloria -I used to work in Maryland :) Did you try to find the Thai herbs you need at "Bo Garden"? From time to time I cook Kaeng Liang for my husband when he's down with the flu. Have a healthy & spicy day :) Amy

thanks , i made same like this , it is delicious , only used canned straw muchrooms , but also good , i waiting more recepi from you , also cooked laab moo , spicy steak salad , tom kha gai , tom yum goong , massaman , ....... , fantastic recepi , thanks a lot

I don't have ground toasted rice; can I substitute it by other ground nut like almond meal?

Hi Simone. Actually, the toasted/roasted ground rice gives this dish a particular taste, smell and texture which can't be substituted. It is however super easy(!) to make as you can see from this link kzitem.info/news/bejne/zIKr15lviWZ-daA If you can't find "sticky rice" then just roast normal Thai jasmine rice. I hope this helps! Grind your own! Toasted Rice. Using a large flat pan and without using any oil spread a single layer of uncooked glutinous rice aka sticky rice over a large flat pan and set heat to medium low. Toss the rice frequently to avoid burning. When most of the rice is a nice golden brown colour, remove from the pan Place in a mortar and pestle and grind to a crumbly meal, stopping before it turns to powder. You want a similar consistency to cracked pepper, if not slightly smaller. The same process can be used to roast your own dried chilli. I use dried birdseye for that authentic fire in the mouth. Subsitute thai jasmin rice if you can't find any sticky rice.
