I just made it with spaghetti. Best tasting thing I have made so far in my cooking career (let's just say there are more ways for me to mess dish up then there are ways to make it awesome). But this Noodle Soup is now my favorite thing to make!

because I'm lazy I did it this way and it worked out pretty well: browned the minced meat (giving it a nice taste) in the pan -> added the tomatoes after the meat browned -> adding chicken stock after the tomatoes are mushy and bring it to a boil -> added the pasta to cook in the delicious chicken stock with all the flavours of the browned minced meat and the tomatoes -> when pasta is nearly done I added the eggs and kept stiring until the eggs are done (this way the eggs stick to the noodles (yummi) and still get all the good flavours -> season to liking and done :D please let me know what you think of it :)

@An Nguyen no they don't need to be cooked - but I put in the eggs when the noodles are nearly cooked (I like my noodles al dente) so I put in the eggs short before the noodles are al dente and stir the soup while putting in the eggs so the eggs give my noodles a big hug ;)

This is exactly what I was thinking. One pan and the eggs are more incorporated in the soup itself. And I definitely like my noodles mre al dente too. I was panicking with how long he left them in the pot!

This single video taught me so much about elevating bland dishes to fabulous. My husband went to the Asian market reluctantly for the black vinegar (which I adore!) And now he's clearing whole aisles in his quest for more goodies. So thank you! I love hot oil too!

Your videos really make me think of my childhood. I miss this dish so much as my grandma used to make it all the time, but without the black vinegar. My family was from Wuhan and I guess that's not northern enought? Lol Now I think of it, I want to make stir fried potato strips. Lol love your videos!!!

I didn't have fresh tomatoes, so I added ketchup, 1tsp spicy red pepper flakes, 2-3 T of hot oil, to my packaged ramen noodles & it's enclosed spiced packet. While it was boiling, I added 2 whole eggs. Made 2 bowls, 1 whole soft boiled egg per bowl. Splitting that yolk open in the soup! YUM!

Ah, so this is super wide-spread. I usually fry my tomatoes more till they're mushy. In season tomatoes (farmer's market in the summer) tend to make better soup. Then I pour in water and when it mixes with the tomato juice, the soup turns super orange red. when the water boils, I add in raw eggs, and if you pour it in slowly instead of all at once, it turns into strands as it solidifies in the water.and then scallions. And salt. Takes more like five minutes instead of twenty. And I mix it with cold rice instead of with noodles, so you get warn soup and rice. I like my method, but it was really cool to see your method as well. ^^

My Chinese flatmate made this for me at university and it was the best. She assured me it was veggie, but I saw the chicken on the bouillon packet afterwards... haha. She didn't know the ins and outs of vegetarianism as she had just moved to England, so she didn't even think of that. Oh well, it was soo good and now I can try and make a veggie version with this recipe!

Because vegetarians are weird. They wanna go vegan, but they can't bring themselves to give up milk, butter, cheese, eggs, yogurt, etc. And some even go that extra step and don't cut out fish or poultry from their diet either. Basically, they wanna be able to pretend they are better than everyone else like the vegans do, but not actually give up the good foods they aren't supposed to have.

I would have boiled the noodles in the soup, it will also thicken the soup and the noddles will soak in the flavour. I can't wait to try it!

This is so delicious and has so many different variations. 番茄鸡蛋汤 and 番茄炒蛋 is like a lazy dish in my house. Serve it with rice and we're good to go. Oh and not forgetting 老干妈 on the side. Yummz!

In my family we always make tomato and egg soup (extra eggs!) but we never usually put noodles with it. Just pour it over some rice. And when we cook the eggs my mother just pours it inside the tomato and vinegar when its boiling so its super cool seeing how you make it!

I cook this noodle almost same as how you did, except that I will boil the noodle with tomatoes and eggs instead of boiling them separately, so tomato juice will get into the noodles. I will also add some pepper oil. Love this dish so much, and it's easy and quick.

Mike, dude, thank you for this recipe. I made it today and it was by far the tastiest noodle recipe I've done. It almost brought me to tears. And it wasn't even in it's final form! :D I mean I didn't have black vinegar, so I improvised a bit, I did put scallions with the tomatoes, instead of hot oil or hot sauce i had to settle for some chilli sauce, and I was all out of seaweed. And I made mine without meat, just because. I had some already cooked meat that would fit in but I decided 'Nah'. But for next time I'm definately gonna get some black vinegar and/or sesame oil, seaweed, and I'm gonna make some hot oil! :3

I am not sure, but as a snob of green bean dumpling soup. There is many ways to eat it. Some like it thin, some like it thick. But in general he did a great job of making a dish and discussing how to change Scallion or green onion seems required, he must just not like them

hey mike, loving ur cooking videos! my grandma used to make me egg and tomato noodles in xi'an all the time! when I was younger I remember she also made me tofu skin salad (豆腐皮) heaps and it was SO GOOD.

Strictly Dumpling I went shopping for noodles and speak very basic Mandarin my cashier spoke Canto and English. She smiled and asked me what I was going to make and I told her Tomatoes and egg soup. She looked at my noodles and laughed and said here let me help you. She stopped what she was doing and took me to another isle and picked out some Baan Tyau noodles and a bottle of some red sauce. I told her I was using hot oil and she said the red sauce was not spicy so it would work great with hot oil. It was totally amazing when done!

You know, I'm a dude, and I have trouble with complicated recipes.. Your recipes are actually pretty easy to follow. If I were you, I wouldn't have put all those noodles into the soup at once unless 4 people were actually going to eat it. I'd put the left over noodles wrapped up separate in the fridge.

Basically every time I don't want to cook a formal dish or out of stock something, I can still always find some tomatoes and eggs from my fridge and cook a tomato & egg soup noodle. Better with some lettuce on top and shrimp in!
