There's nothing like the classical way of making things like this Classic Pain Perdu. I don't know but for me the traditional of making French Toast has character, raw and rustic. I should have watched this first before I made mine. Anyway, thanks Stephane!

Love this! I was taught in HS to do this way. I make it for my son the “American” way but for since I don’t care for overly sweet, I love this with coffee. I even dip it slices in my latte

I just did it. It's simple but fast to make, especially when you just woke up and feeling so hungry yet, you want a proper breakfast. The great thing about this recipe is, you can make the left over eggs into scrambled eggs. No waste! I put a lil but of cinnamon and grapes to pair it with. Thank you Stephane!

Interesting two bowl technique ... never heard of that before, I'll try it next time ... I'll also try the granulated sugar ... looks good! we usually use powdered sugar or *maple syrup* (yes, yes!) but I'm willing to learn a new way to do it

A friend from the US visited me in Paris and I took her to dinner. I ordered pain perdu for dessert and looked at me as if I was crazy; “ that’s BREAKFAST!” She said. 😀 I see that many times here in France pain perdu is served with creme Anglais. Not traditional, I’m sure, when did that start? Thanks again Stephane for some traditional cooking.

Thank you for educating us to the traditional method. Been making 'french toast' since childhood. The separation of egg and milk is brilliant.... Creating the eggy crust and fully saturated fluffy texture is rather unfeasible. When milk and eggs are combined the inner texture often becomes too 'eggy' From here you could have two different flavor profiles by seasoning the egg and milk separately. Vanilla added to milk and cinnamon to egg would be a popular choice. Merci

If it’s eggy in the other method, it’s because you didn’t use enough milk. Two eggs per 1 cup of milk is the most I’d use in the custard I would think this method where there’s pure egg on the exterior would definitely taste eggy.

I don't know how many times I had stale French bread (I buy my French bread at Costco and it comes with two loaves and by the time I want to eat the second loaf, it goes stale and is as hard as a brick...) and did not know what to do with it. Thanks for this simple recipe. I can't wait to try it.

@@MichaelTheophilus906 -TBH, I couldn't tell you the difference between "good" bread or "bad" bread. I'm not that discerning. To me bread is bread. I just know the bread at Costco is in the shape of a baguette and that's good enough for me. I use it for my spaghetti to dip in my sauce. I usually use garlic butter and Herbes de Provence. Also, sometimes my wife and I will slice it very thinly and place Brie cheese on it and have a good of wine, while watching out favorite TV show. I'm just an ordinary guy who enjoys eating. Hsve you ever heard of Jacques Pepin? He is my favorite chef. He's a works class chef, but he's not pretentious. In his "Home Cooking" videos I saw him once use Jiff peanut butter in one of his recipes. Another time he made "cinnamon butter" cookies using bread with the crust cut off. I love that he "gets it". To many high end chefs confuse food with "art". Personally, I just want to eat and be happy.

We have grown up eating French toast( modern version of it). Every other day we eat French toast...maybe as much as French people eat. Just imagine how much we like it. Today, I am so happy to find the classic recipe of French toast. From now on whenever I find baguette here, I will cook classic version of French toast. Thank you Stephane for enriching our knowledge of French cooking.

3 years ago, I was gifted with a cookbook by Jacque Pepin. In the soup section, he was asked about the secret to great soup. Have a good pot, good stock, (broth) and empty your refrigerator. LOL, it took me right back to my childhood, and my step sister's refrigerator stew! Bon Appetit!

I have always had problems making french toast. always came out soggy, too sweet, tasteless, limp, under cooked, over cooked, awful texture... just a horrible mess and always a total failure. This is the BEST french toast recipe ever !!! I made it and it is so simple and sooo good. Thank you for this !!!! C'est top !!

Will try this, but I do absolutely love my recipe where the bread is at least twice as thick and soaked overnight with some buttermilk added... It's like custard cake and brings world peace for a few delicious mouthfuls

I so did not know that the milk and eggs were not added together. I make a savory version with the addition of cheese cheddar or parmesan or sometimes plain old salt and pepper no sugar. I will try the real deal though maybe with cinnamon sugar.

Oh I've always used stale French or Italian bread ,sliced thick, make the batter.. eggs, milk pinch of salt, vanilla cinnamon,and some sugar and I prefer to add some flour

2:28 I had to look up moulu in my French dictionary. It says that that word can mean "worn out," or "ground." In this case, ground doesn't mean the "dirt you walk on;" It's a word that's "related" to the verb "grind." I think sel means "salt" in French.

Any old bread in our house is made into "pain perdu". We call it simply "fried slices". MY husband eats them with feta cheese,, other people with honey. I don't sprinkle them with sugar. You can dip these in everything - salty or sweet. :)

Fascinating. As a child in the UK (in the 60s & 70s) both of my grandmothers made this, using eggs, milk & regular sliced white bread. But they called it “King’s Bread” and it was seasoned with salt and pepper, not sweetened. I wonder where & why the variation in flavouring and the difference in name came about. I sort of assume the name could be some sort of “British National war/post war austerity spirit” thing encouraged by the king (sugar being hugely rationed as mostly imported for ages). I still prefer it savoury to sweet and I *love* sweet stuff :)

We had it savoury style too - with Heinz tomato ketchup or HP sauce. great for tea time on Sundays. Just called eggy bread!

Any idea which part of France your ancestors are from? I have ancestry from France but was born and raised in Canada. Most people here use maple syrup in place of the sugar.

My mother ALWAYS sliced the bread on an angle. I always thought it had more to do with increasing the surface area of the bread to be coated and then fried for French Toast. I was always the renegade of the family, preferring Vermont Maple Syrup to sugar on my portion. Yes, heresy, I know. I apologize.

Drunken Master II--Read labels carefully. People often mistake "table syrup" (which is NOT maple syrup at all) for maple syrup. Furthermore, Quebec, a province of Canada, produces the most maple syrup; Vermont is second. I was just wondering what was the difference between Vermont maple syrup and regular one. I'm from Quebec, I never had Vermont maple syrup, but if there's anything special about it I'll gladly make a trip to Vermont just to try it. We also use maple syrup on pain perdu here too, but we call it pain doré.

@@drunkenmasterii3250--The site to which I referred you indicated that Quebec is the world's #1 producer of maple syrup. Vermont is #2. I have NEVER seen Quebec maple sup for sale in any store (including Cost Plus World Market!). If I do,, I'll purchase some and try a taste test to see if there's a subtle difference in flavor. My guess is that the lack of it here in our shops has more to do with a balance of trade than anything else as to why it's not common here.
