I basically lived at a mexican restaurant for years. They would marinate their pork in the oj, coke, garlic and onion for hours...they would then cook the carnitas in a huge pot in the oven and then fry to order. The marinate gets into the meat vs being diluted by oil. I am sure these are good as well.

I’m hooked on these and that’s exactly the best way to eat them . Literally grab tortillas and just pick up that sweet orange juice meat and I pour that golden lard sauce all over them after I break up the meat and the onions pick up all the flavor as well . This and Birria I can’t stop making

Man that takes me back I grew up in a Mexican neighborhood and the family next door I used to help butcher the animals when they would have a big celebration so I got all kinds of awesome food from them I couldn’t pronounce most of it but it was the best

If people don't want to fry their pork in lard, you can just boil it in chicken stock with some spices (bay leaf, salt, pepper, cumin etc) and some diced onion. When almost all the broth is gone, you can transfer the meat (and some broth) to the oven to get a little crust on it. I like to eat it on soft corn tortillas with guacamole. (salsa, onion, lettuce optional)

The amount of lard is irrelevant, it is just a cooking liquid. Just needs to be enough to braise the pork.

Back in the early 80’s I would stop at a little burrito shack right by the famous Rosa’s Cantina Marty Robbins sang about in “El Paso”. They had the very best carnitas burritos (with pico de Gallo salsa)in the world. I think Claudia’s recipe nails it. The place was near Sunland racetrack. It’s name was Easy Bee and I’ll take those memories to the grave! Thank You Claudia. You’re awesome.

I’m from Sunland Park and Rosas Cantina is still there, just not the burrito shack you are mentioning unfortunately, I’m 35 and sadly never ate there but sure have had some drinks at Rosas throughout the years 🤘🏻 Saludos OG

Funny….yeah 10 lbs seems pretty unnecessary. I tried making this for the first time and I didn’t want lard so I seared it. Put it in the instapot with water and all the wonderful ingredients. Let it cook. Then I drained it and deep fried them in oil. Used oil either way but I fried them in portions so I wasn’t left with so much grease at the end. They were delicious carnitas at the end. Still love Claudia and her cooking. This is a once a year meal just like tamales.

Another tip: Take some shredded meat and toast in a pan or under the broiler for crispier, still juicy and delicious carne! Seriously the best! 🤤💜

I hate people that the word Mexican food that are a embarrassment to Mexican cooking people carnitas ar just with water and salt cook on a cooper pot and fire wood don't get me wrong her sooo call carnitas might be good but went you put all that is no longer call the word Mexican their is people that they do use just one ingredients but it's just fur the colorits choice orange juice or coke or milk and the real time to Cook is 3 and 45 minutes to 4 and a half hrs a lot of you should now that there's food that cook better in drend temperature because it taste different
