Make delicious tzatziki sauce, with nice texture, wonderful taste and aroma. You will need strained yogurt, fresh cucumbers, fresh garlic, dill or mint, extra virgin olive oil, salt, black pepper and lemon juice or vinegar. The first thing we do is grate two cucumbers on the grater, on the thick side. You do not need to peel them.
Cucumbers grown in the field are more crunchy and more fragrant than those in the greenhouse. If the cucumbers you have are thick they will definitely have large seeds inside, which it is better to remove them before grating them. Cut the cucumber lengthwise and with a teaspoon remove the inside (the part that is softer and contains the seeds).
Put the grated cucumber in a strainer and then in another bowl. Add salt to the cucumber and set aside for a while. Salt will help it leave its water, which we do not want in our tzatziki because it will make it very runny.
Put 400g of strained yogurt in a bowl. We take the grated cucumber and put it on a clean towel. Wrap the towel and twist it to squeeze and remove all the water from the cucumber. We put the drained cucumber in our yogurt.
Mash three cloves of fresh garlic and add them to the yogurt.
Tzatziki is made with dill. But many prefer it with mint because it makes it lighter and more refreshing. There is no problem if you want to use both ingredients together! Today we will make it the way we usually eat it in Cyprus, with dried mint. If you use fresh mint, you must cut it the moment you put it in the tzatziki and not before because it will turn black.
Add mint or dill, salt, ground black pepper, 3-4 tablespoons of extra virgin olive oil, and two tablespoons of wine vinegar or lemon juice. Mix well with a spoon.
We try the tzatziki and correct the taste according to our preference. Add salt, pepper, olive oil or vinegar if you think you need to. Keep in mind that garlic and mint will take some time to give their aroma and taste to the tzatziki.
Cover it with plastic wrap and definitely leave it in the fridge for 2-3 hours or better overnight and always serve it cold. Garnish with fresh mint and olive oil. Ready!
