With this recipe you can make your own smoked ‘salmon’ with only a few simple ingredients. With carrots baked in a salt crust and some seasonings you can create a very unique and delicious version of smoked salmon that tastes just like the real thing - and even better. It is a dish to surprise your guests and elevate any brunch - whether you are vegan or not.

Here is what you need to make carrot lox:
👉🏻 about 5-6 medium sized carrots⠀
👉🏻 2 kg coarse sea salt⠀
👉🏻 1 deep baking dish⠀

Marinade:⠀
👉🏻1 capsule omega 3 oil (from algae)
👉🏻1 tsp liquid smoke⠀
👉🏻1 tbsp canola oil⠀
👉🏻1 tsp rice vinegar⠀
👉🏻1 tsp maple syrup
⠀
Toppings:⠀
⠀
👉🏻vegan cream cheese⠀
👉🏻red onion⠀
👉🏻capers⠀
👉🏻fresh dill
👉🏻lemon

Directions:⠀
Bake the carrots covered in salt in the oven at 200C(390F) for 2 hours. Let them cool down and then break the salt crust carefully with a wooden spoon. Remove carrot skin with a sharp knife. Then cut carrots into thin slices. Place them in a sealable jar, add the marinade - shake - and let it sit in the fridge overnight for optimal taste. (You can also make this ahead of time as it will stay fresh in the fridge for up to a week)
