Hi there! What if I can’t get Poblano peppers where I am? Will regular green bell peppers do the trick?

It had a medium heat to it, depending on your peppers which do vary in spiciness.

@@Thestayathomechef 👍 It was fantastic, absolutely fantastic! I've never been to your local restaurant, so, I made minor changes to your recipe: I roasted 2 ginormous poblanos, used sliced provolone, (packaged, processed cheese,) grated parmesan, and a big pinch of crushed red pepper flakes. The veggie stock was a great idea. I almost went with shrimp stock but didn't want to stray too far from your idea... And, as I said, it was fantastic! Thanks again 😎

Hard to tell. Everyone has different definitions of "too hot". Better to play it safe.

I'm watching this from Paris, France. I'd love to make some of this soup but I very much doubt that I'd ever find fresh poblano chiles here. She hasn't answered the question about knowing if these chiles are really, really hot or not. Oh well, maybe I'll try making it with a Moroccan green chile which is flavorful but not so hot. It ressembles a long chile verde I tasted in California. In any case, it can't be bad! 😊
@Thestayathomechef

Describing how spicy/hot something is near impossible because everyone has different tolerances. Poblanos have about a 1,500 Scoville heat units so you can use that to compare it to other heat levels of foods you can or can not stand.

@@Thestayathomechef thank you for this information, it's very helpful. Oddly enough here in France we can easily find tiny Thai chilies or chilies from Martinique, both of which are REALLY hot and not for amatures like me. I'll use your poblano chile Scoville rating and compare it to information I can most probably find about the 2 chilies which are easily available here. Thank you for the visuals on how to remove the skin.

My experience with cooked Poblano peppers is that most are not overly hot. Not near as hot as a raw jalapeño. However, occasionally there can be a super hot one for some reason. Regardless, if you purchased a few you’d be sure to get two mild ones. Also, in a soup like this, including the cheese, the heat should not be that bad. A spoon of sour cream would also help with the heat - and would go well with it in my opinion. Finally, if too spicy for you to eat, you could save it by adding more stock and cheese. Hope this helps!

Very good! My poblanos were a little hot so I put a big dollop of sour cream in my bowl. I served these with buttered, warmed corn tortillas....yum! Thanks for a great recipe!!
